个人简介
As a professor in dairy food processing and chemistry I have conducted research in the food science program at Utah State University for 27 years to better understand the chemistry and technology underlying conversion of milk into high quality dairy foods with enhanced nutritional properties. I directed the Western Dairy Center for 20 years and founded its BUILD Dairy program as a regional center for dairy food research and technical training. I also oversee the Aggie Creamery in the C. A. Ernstrom Nutrition and Food Sciences building, the home of Famous Aggie Ice Cream®.
I have published over 100 papers on milk proteins, cheese, ultra-high temperature processed milk and other dairy products and am a frequent speaker at national and international meetings, and received various awards including the 2011 most cited dairy foods research paper of the Journal of Dairy Science. Many of my students I have mentored now work in leadership roles in the dairy and food industry.
