Fernanda M. Vanin is Assistant Professor of Food Engineering Department, University of Sao Paulo. She has a particular interest in food process and its effects in food properties development and also nutritional aspects; whether it is looking for "new" sources of foods, and how process should be performed to enhance nutritional aspects, assessing process changes in relation to physical quality properties, sensorial consumer acceptance and nutritional aspects.
