Mehdi Tabarsa is an MSc graduate from Tarbiat Modares University (TMU) , Iran, in Fisheries Science, and a PhD graduate from Gangneung National University, South Korea, in Marine Food Science and Technology. He joined the Seafood Processing Department at TMU in September 2014. His research program involves the characterization of bioactive polysaccharides and their applications in food systems. During the past few years of research at his current position, he has been actively engaged in search for dietary fibers from a wide spectrum of raw materials and adapted his investigation at the intersection of structural elucidation, health-promoting properties and food product developments of polysaccharides.
