Study on the Conditions of Degrading Polycatechins into Catechins by Aspergillus niger

The polycatechins in tea polyphenols can be degraded into catechins by Aspergillus niger under certain conditions.When tea polyphenol concentration was 8 g/L and initial pH was 5.5 in the medium,inoculum volume was 6%(v/v),culturing the strain for 60 h at 30 ℃,the maximum yield of the catechins was 26.89%.The results could provide some references for understanding the biodegradation of plant polyphenols and fine applications of tea polyphenols.
