1. 1. The difference spectral absorbancy in the ultraviolet range, induced by addition of various sugars to the extract from the epithelial tissues of the rat tongue was measured. 2. 2. The relative effectiveness of sugars is in the order of sucrose > fructose > sorbose > mannose > maltose > xylose > raffinose > rhamnose > galactose > glucose. 3. 3. The interaction between sucrose and the extract is independent of pH change between 5.4 and 8.6.
