摘要
•The glucose and protein contents of DOMP were 11.05% and 13.39%, respectively.•The average molecular weight of DOMP was 9062 Da.•DOMP showed spherical particles with aggregation, with average diameter of 0.18 μm.•The viscosity of DOMP decreased gradually with increase in shear rate.•DOMP size decreased and its emulsifying properties improved at acidic and basic pH.
