摘要

•Uronate dehydrogenases convert uronic acids in food waste to useful sugar diacids.•Directed evolution was used to improve thermal stability by 18 °C.•X-ray crystal structure showed good side-chain packing and no obvious differences in B-factors compared to wild type.
