Hydrolysis of plant proteins at the molecular and supra-molecular scales during in vitro digestion

•Food matrix strongly affected the proteolysis of soya protein.•Pea-protein emulsion was better hydrolysed than pea-protein isolate.•Freeze-drying seitan increased the final degree of proteolysis.
