A review, with 40 refs., of the use of high-protein by-products from various food industries for the preparation of active biopeptides. Their characteristics and antimicrobial, antioxidant and hypotensive effects ware discussed. The sources of the active biopeptides and the methods of their production and purification in terms of bioactivity and bioavailability ware presented.
