•SAR backscatter of olive trees follows a Gaussian distribution that peaks in summer.•SAR backscatter is well correlated with in situ measurements of water-uptake rates.•VV polarization shows higher correlation with in situ water-uptake rates than VH.•SAR backscatter did not respond to any of the phenological stages of olive trees.
