In general, the analytical result of a measurement is only an approximation or estimate of the value of the specific quantity subject to measurement, that is, the measurand, and thus the result is complete only when accompanied by a quantitative statement of its uncertainty. In this chapter, introduced are the uncertainty of measurement, components of measurement uncertainty, evaluation of uncertainty, and reporting uncertainty. In addition, quality control of measurement results in food integrity is exemplified by the uncertainty evaluation of ricin detection using aptamer-based lateral flow immunochromatography assay.
