Mol. Nutr. Food Res. 2023, 67, 202200221 DOI: 10.1002/mnfr.202200221 Epidemiologic evidence suggests a link between food allergy and the intake of advanced glycation end-products (AGEs). This study investigated the role of allergen-specific and non-specific AGEs in allergenicity of ovalbumin (OVA) in a mouse model of food allergy. The OVA-AGE elicits a stronger Th2-response than native OVA, in comparison to severer disruptions in gut barrier function and gut microbiota in mice exposed to non-relevant AGEs. This is reported by Shuifeng Zhang, Linglin Fu, and co-workers in article number 2200221.
