
Purpose: Wine has a purely symbolic connotation in the eyes of consumers and the market. Therefore, it could lead to a different consideration and perception of buying local wine which could be sensed as a social experience rather than an automatic action. The research aim is to highlight the bond between customers and the product (Sicilian DOC wine) by overcoming the utilitarian limit and showing the social one. This study has the purpose of understanding in depth how individual behavior and social relationships are able to influence people's behavioral intentions which lead to an increase in wine consumption. Methods: The sample was characterized by 302 consumers of Sicilian DOC wine who gave their consent to participate to the research to verify how the social aspects may lead to the behavioral Intentions of purchase. The cross-sectional research has been conducted using an online survey which was available to be filled in by participants from May 2019 to December 2019. Data were analyzed using SPSS. Results: The results show how subjective norms and social activity constitute two crucial dimensions for consumption behavior through mediating the effect of individuals identification with people that tend to choose and consume Sicilian DOC wine (social identity) on the behavioral intention of that product to fulfill their desire. Both indirect effects of social identity on behavioral intentions (IE = 0.04; C.I. = 0.01– 0.05; IE = 0.02; C.I. = 0.005– 0.03) are significant and mediated by subjective norms and social activity. Conclusion: Social activities and subjective norms influence people's intention to purchase a Sicilian DOC wine for purely social and symbolic purposes. The number of vineyards in Sweden is increasing, but vineyards may have a negative environmental impact, resulting in further eutrophication of surface waters. In this study, the nutrient balance was calculated for four vineyards in southern Sweden. Comparisons of the results with nutrient deficits/surpluses under comparable land uses (arable, pasture) revealed only minor surpluses from the vineyards. Therefore, current fertilization strategies for Swedish vineyards do not appear to raise environmental concerns concerning eutrophication risk. Keywords: cold climate wine, eutrophication
Purpose: This research studied the impact of biodynamic and conventional winemaking processes, using biodynamic grapes, on both the intrinsic and perceived quality of some Sangiovese wines.Materials and Methods: Three wineries producing biodynamic wine and a conventional winery participated in the study during the 2015 and 2016 harvests.Biodynamic and conventional winemaking protocols were applied on the same biodynamic Sangiovese grapes.The eligibility, identity, and style properties (the intrinsic quality) of both the biodynamic and conventional wines were measured after malolactic fermentation.Moreover, a group of experts evaluated the perceived quality by rating the overall quality and typicality of the wines.Results: The experimental data showed that the intrinsic quality of Sangiovese wine samples was affected greatly by the vintage and winemaking protocol factors and slightly by the growing area factor.Significant differences in phenolic and aroma profile, intensity of taste, odor, and flavor attributes occurred between the biodynamic and conventional wine samples.The above differences in intrinsic quality levels did not lead to a different evaluation of either the perceived overall quality or perceived typicality by the wine experts. Conclusion:The above result can be considered important because the biodynamic winemaking process affected the intrinsic quality level of the Sangiovese wines while the perceived overall quality and typicality of the biodynamic and conventional wines were not significantly different.The tested biodynamic wineries were able to produce appreciated biodynamic Sangiovese wine, as was the conventional one, but with the use of fewer resources in the winemaking process.
Purpose: Red wine may benefit health due to the presence of polyphenolic compounds. This research investigated effects of wine (W) versus grape juice (J) on body composition, blood lipids (cholesterol, HDL, LDL, and triglycerides [TG]), vascular responses (augmentation index [AIx] and central pulse wave velocity [cPWV]), inflammation (C-reactive protein [CRP]), and plasma antioxidant capacity (ferric-reducing ability of plasma [FRAP]) in sedentary individuals. Methods: In a randomized crossover design, 19 participants consumed 300 mL of W or J for two weeks and then acutely in the lab. Blood was drawn at baseline, post two weeks, and within 1 hr after consuming treatment. Repeated measures ANOVA with 2 (treatment) × 3 (time) was used for FRAP, AIx, and cPWV and 2 (treatment) × 2 (time) for blood lipids and CRP. A paired t -test was used to compare differences in diet and weight change. Results: Acute, but not chronic, consumption of wine significantly increased FRAP (treatment P = 0.028) and significantly decreased AIx (treatment P = 0.038) while juice exhibited no effects. An overall treatment effect existed for TG ( P = 0.028) in wine only. Cholesterol, LDL, HDL, and CRP were not affected in either group. Conclusion: Acute, but not chronic, consumption of wine significantly increased antioxidant capacity and resulted in beneficial changes to the vasculature as determined by AIx. Wine, as any other alcoholic drink, should be consumed in moderate dosages. The scientific literature reports a huge number of articles describing the various health benefits of moderate wine drinking, but none have so far summarized the different types of evidence supporting these effects. Furthermore, there is no proof that any specific wine might be more or less beneficial than any other according to its content of specific nutrients and components. The aim of this article was to identify the individual components of wine that are known to have a potential to effect on health, in order to create a wine-specific index to grossly estimate the impact of moderate wine drinking on well-being. A deep search was performed on the medical literature to choose those articles that could explain the role of the main components of wine on health. The proper dosages and the instruments to evaluate the quality of wines were identified and are described herein. Evidence supporting the role of alcohol, acidity, sulfur dioxide, malic acid, metals, polyphenols, and other components of wine on health was identified and summarized, and the various links with health benefits are described. Then a Wine Index of Salubrity and Health (WISH) was developed which, as a rapidly available and effective instrument, will help to understand at a glance the potential beneficial effect of a specific wine. Background: Climate change (CC) could have both positive and negative consequences for the Canadian and global wine industries. Understanding how winegrowers perceive CC, however, can provide insight into how to better assist the industry to cope with the impacts of a changing climate. Material and methods: An online survey of 122 Canadian winegrowers was conducted to understand knowledge, beliefs, environmental values, and perceptions towards CC and its impact on the Canadian wine industry. Environmental values (New Environmental Paradigm score), subjective and objective CC knowledge, CC skepticism and uncertainty, belief in anthropogenic CC, and perceptions of the impacts of CC were measured using established tools. Results: Overall, results show that Canadian winegrowers have a relatively low level of CC skepticism, a medium level of CC scientific knowledge, a pro-ecological (as opposed to anthropological) worldview, and generally believe that CC is caused by a mix of anthropogenic and natural forces. Moreover, a majority of respondents (60%) believe that CC has both positive and negative consequences on their vineyard and winery operations, while 8% think that climate change has no consequence on their operations. An extended growing season for grapes, the improvement of grape and wine quality, and the possibility to grow varieties that are not currently viable were the main beneficial consequences of CC reported by participants, while an increase in both disease and pests in the vineyard were the most commonly identified disadvantages. Finally, no association was observed between CC skepticism, knowledge, environmental values, and the perception of CC consequences. Conclusion: Our findings inform communication strategies for the wine industry around CC, and provide important baseline information on winegrowers' perceptions that inform wider efforts to improve the capacity of the industry to develop and adapt to the consequences of CC. Purpose: This work examined the color measurement and color appearance of wine under various illumination types in order to assess the importance of illumination in the sensory evaluation of wine. Materials and methods: Six finished retail wines were measured in 8 different spectrophotometric and spectroradiometric geometries, both in analytical cuvettes and International Organization for Standardization tasting glasses. The resulting spectral transmittance data were analyzed colorimetrically using 2 color spaces (Commission Internationale de l'Eclairage L*a*b* and Commission Internationale de l'Eclairage Color Appearance Model 02) to examine the effects of both measurement geometry and viewing condition on the appearance of wines. Results: The results clearly indicate that measurement geometry is critical in wine color assessment and that the lighting used to view wines, as well as the lighting levels, can have significant impact on the perceived colors of wines and ultimately the judgments made in sensory evaluation procedures. Conclusion: Standardization of lighting type, level, spectral characteristics, and geometry are needed for careful and consistent sensory evaluation of wine color. Wine is an important beverage with a long tradition, and its moderate consumption may be considered beneficial for human health. Although there are many studies regarding phenolic compounds in wines, there is a lack of information about antioxidants and phenolic content in South American wines. In this study, 35 South American red wines from four different countries, vintages 2004–2013, purchased at retail stores in La Paz, Bolivia, were studied. Resveratrol content, total antioxidant capacity (TAC) by the 2,2′-azino-bis(3-ethylbenzotiazoline-6-sulfonic acid) (ABTS) and ferric-reducing antioxidant power (FRAP) methods, total phenolic content (TPH), total flavonoids (TF), and main saccharides were assessed using the well-established spectrophotometric and high-performance liquid chromatography methods. The results ranged from 4 to 24 mmol/L for TAC determined by ABTS method and 14 to 43 mmol/L for TAC determined by FRAP method, 1600 to 3500 mg gallic acid equivalents/L for TPH, and 2 to 6 mmol catechin equivalents /L for TF. The resveratrol content ranged from 0.1 to 8 mg/L. Saccharides, glucose, and fructose content ranged from 0.4 to 10 g/L, 1.4 to 8.6 g/L, and 0.2 to 12 g/L, respectively. There was a high correlation among the different methods. The results showed that some wines growing at high altitude (>1500 meters above the sea level) have higher amounts of TAC and phenolic content, including resveratrol, while non-varietal wines showed the lowest values. Changes in wine consumption are influenced most by health: results from a population survey of South Australians in 2013 Creina S Stockley,1 Anne W Taylor,2 Alicia Montgomerie,2 Eleonora Dal Grande2 1The Australian Wine Research Institute, 2Population Research & Outcome Studies, Discipline of Medicine, The University of Adelaide, Adelaide, SA, Australia Aims: Individuals change their wine consumption over their life course, and mean volume typically declines with increasing age. Research on the reasons individuals change their consumption has primarily focused on youth/the young, but not on older adults. This study's aim was to ascertain changes in wine consumption over a 12-month period in Australians at different ages and what influenced these changes.Methods: As part of the Spring 2013 South Australian Health Omnibus Survey, persons (n=2,908) aged 15 years and over who had most recently had a birthday in the selected household were interviewed in their home by trained interviewers. Of these, 48.9% were males and their mean age was 46.3 (standard deviation 18.9) years.Results: Regular, light–moderate wine consumers were generally stable in the amount of wine they drank over a 12 month period, particularly those aged 55 years and older. They generally cited health (48.0%) as a reason for decreasing their wine consumption. Those who usually consumed three to four standard drinks on days they drank wine were also more likely to give health (54.3%) as a reason for decreasing their consumption, as were heavy wine consumers (57.7%). The 25- to 34-year age-group was more likely to have decreased (36% vs 26%) their wine consumption in the last 12 months. The 15- to 24-year age-group was most likely to have increased (28% vs 10%) their wine consumption in the last 12 months. Health was most cited as the reason for decreasing this consumption, while family and friends were most cited as the reason for increasing this consumption.Conclusion: In this representative population of South Australians, the wine consumption of previously identified at-risk groups for both short- and long-term harms, ie, youth and older adults, as well as excessive and heavy drinkers, was most influenced by health, family and friends, and employment. Recent climate changes have caused the rising of average growing season temperatures leading to the advancement of vine phenological stages and to earlier harvests. This could result in the production of grapes with advanced berry sugar accumulation, but incomplete phenolic ripeness, thereby jeopardizing wine quality. This study aims to evaluate the effects of the application of a new product consisting of yeast derivatives on the phenolic maturity and composition of Agiorgitiko grapes and wines, under contrasting water conditions. The experiment was arranged as a 2×2 factorial design in a commercial vineyard situated in southern Greece, combining foliar spraying with LalVigne ® Mature (two applications after veraison and an untreated control) and water conditions (deficit irrigation and nonirrigated). Irrigation accelerated berry sugar accumulation, increased berry weight and anthocyanin content, and decreased skin tannin concentration. Spraying with yeast derivatives did not affect phenolic content of berry components, and it had no effect on must attributes. Foliar application of yeast derivatives resulted in a higher phenolic potential of the produced wines, only when combined with irrigation. The wine industry is currently shifting toward more sustainable production practices. Due to the growing globalized wine market and the increasing environmental impacts, producers have begun to pay more attention to organic and biodynamic products. Using a systematic literature review, this review aims to investigate the biodynamic production system in the viticulture and winemaking process. In particular, the review examines, 1) the biodynamic practice and its main characteristics including the certification system; 2) the biodynamic market characteristics and the recent trends, the production costs and the marketing strategies adopted by wineries; 3) the demand attributes and wine consumers' perception on sustainable practices and "green products" such as biodynamic products; and 4) the association between the biodynamic wine chain and the environment. The review highlights the research progress in this field and reflects on the potentiality and needs of the biodynamic viticulture and wine sector. The literature clearly indicates the lack of knowledge regarding, mainly, the biodynamic farming concept and the label. Moreover, while it is clear that consumers are willing to spend more for an organic wine than for a conventional one, there are no data about the willingness to pay for biodynamic wines. Botrytized wines are wine specialties made of overripe grapes infected by Botrytis cinerea with the form “noble rot”. Due to the particular characteristics of the noble rotted grape, these wines (eg, Tokaji Aszú, Sauternes, Trockenbeerenauslese types, etc) have many characteristic features, including higher or lower residual sugar content and unique aroma composition. The technology, biochemistry, and special characteristics of botrytized wines have been researched for a long time. This review outlines the main directions of the current studies, giving a brief overview on the recent findings. Beside the traditional wine types, noble rot is increasingly utilized in making newer sweet wine styles and straw (passito) wines, which generates a series of new interesting experimental results. The fungus–grape interactions during the noble rot, the induced botrytization, the microbial communities of botrytized wines, and the volatile compounds having key roles in the distinct aroma of these wine styles are being focused on in the current studies in this field. The purpose of this work was to investigate the effect of l-malic and citric acids and SO 2 on two biochemical properties (diacetyl/acetoin/2,3-butanediol formation and β-glucosidase activity) relevant to flavor development in six Oenococcus oeni strains from wines at pH 4.8 and 3.8. Cells were cultured in MRS without citrate (control medium) and combined with l-malic acid (2 g/L), citric acid (0.7 g/L), and SO 2 (80 mg/L) at pH 4.8 and 3.8. All the test strains grew at all conditions tested including in the presence of SO 2 and at initial pH 3.8, even though growth parameters were maximum in the presence of both the acids at pH 4.8. Organic acids were depleted totally regardless of the condition examined, in which degradation of l-malic acid was faster than that of citric acid. Diacetyl, acetoin, and 2,3-butanediol levels significantly varied depending on the strain for a given condition, for example, at pH 4.8 in control medium the highest value (6.55±0.31 mg/L, strain MS25) represented almost threefold the lowest one (2.43±0.22 mg/L, strain MS9). There was also variability for each strain depending on the initial pH (strains MS25, MS27, and MS48) and the presence of organic acids (all strains except MS25) but not SO 2 . In addition, among strains there was a trend toward mainly diacetyl formation (55%–75%). O. oeni MS9, MS20, and MS46 yielding adequate diacetyl levels were selected for investigating specific β-glucosidase activity and its possible cell localization. Cell suspensions of all the selected strains exhibited positive activities at both pH values which were >4.8. As observed for C4 compounds, organic acids stimulated this activity (28%–49% at pH 4.8; ~20% at pH 3.8), thus partially reverting the inhibition caused by acid stress, while SO 2 did not affect it. The use of different cell fractions (permeabilized cells, cell protoplasts, and cell extracts) associated this activity to the cell surface. Results indicated that diacetyl formation and β-glucosidase activity levels in O. oeni strains as influenced by acidity and organic acids are of relevance for vinification decisions. The effects of climatic factors on yield and berry and wine quality for long-term (7 years) deficit-irrigated (DI) Monastrell wine grapes under the semiarid conditions of southeast Spain were analyzed. The relationships between climatic variables and the yield, and novel technological berry quality (QI technologicalberry ), phenolic berry quality (QI phenolicberry ), overall berry quality (QI overallberry ), and wine quality (QI wine ) indices confirmed that the most important climatic factors were rainfall, temperature, and radiation. Climate was more influential in determining yield, berry, and wine composition in some important physiological periods such as early season (budburst–fruit set) and ripening (véraison–harvest). In general, climate had more influence on berry quality than on wine quality indices and greater QI overallberry was also reflected in greater QI wine . According to the stepwise multiple regression, the best fitted models for the partial root-zone drying irrigation (PRI) system were less complex (with a lower number of climatic variables) than for the regulated deficit irrigation (RDI) system, suggesting that PRI is less influenced by climatic factors than RDI. For PRI, the models for yield, berry and wine quality were explained by three climatic factors (rainfall, Tª, and radiation), whereas for RDI, more climatic factors came into play (number of hours of sunshine, evapotranspiration, and vapor pressure deficit). According to these models, in RDI, a sunny and drier pre-véraison period followed by higher soil water availability and associated greater crop evapotranspiration during ripening favored final berry and wine quality. In contrast, in PRI, greater rainfall during the growing season and greater solar radiation during ripening were the main climatic factors that positively influenced the yield response, berry and wine quality. Besides, berry quality in PRI was more affected (negatively) by high temperatures (high Tªmax and Tªmin) during the growing season than in RDI and SDI, indicating that cooler and humid years may favor the PRI response more. These results suggest that years with a cool, wet winter followed by a mild, wet spring and early summer (April–June) and a mild fruit set–véraison period (June–July), and then greater solar radiation during ripening (August–mid-September) provide adequate growth potential and increase the likelihood of higher berry and wine quality in PRI. Besides, more irrigated SDI vines were less sensitive to high temperatures and low soil water content during ripening than RDI and PRI vines. Grape seed extract is known as an effective antioxidant that protects the body from premature aging and disease. A number of phytochemicals including resveratrol, proanthocyanidins, etc, have demonstrated significant benefits in cancer chemoprevention. In this review, we summarize the existing knowledge on the antitumor and antioxidant activity of grape seeds polyphenols. Background: Wine regions throughout the world are experiencing climate change characterized by the gradual alterations in growing seasons, temperature, precipitation, and the occurrences of extreme weather events that have significant consequences for quality wine production. Adapting to these new challenges depends largely on the present and future adaptive capacity of the grape growers, winemakers, and supporting institutions in order to minimize the impacts of climate change on grape yield and wine quality. Accordingly, the objective of this study was to develop a conceptual framework for assessing the adaptive capacity of a grape or wine region and apply it in the context of the Ontario wine industry. The framework consists of a three tiered structure, comprising eight operational and strategic determinants (financial, institutional, technological, political, knowledge, perception, social capital, and diversity). A comprehensive questionnaire was created from this framework consisting of 26 statements to which participants indicated their level of agreement. A total of 42 Ontario wine industry members completed the questionnaire via an on line survey. Results: The determinants related to perception, diversity, and knowledge have the highest degree of capacity, while political and technological determinants show the least. Overall, stakeholders are aware of both negative and positive impacts climate change could have on wine production. Results are discussed to explore opportunities to enhance adaptive capacity in the grape/wine community. Many stakeholders have already incorporated new adaptive technologies into present practices and are interested in learning new skills to assist in future adaptation. There is a dearth of information in the knowledge base about who the chardonnay consumer is, what their wine-consumption metrics are, what sensory characteristics they associate chardonnay with, and who influenced their perceptions. This study examines the consumer engagement with chardonnay, and contributes evidence-based research to inform future wine-business strategy. A population sample was recruited to be representative of Australian consumers. An online survey of 2,024 Australian wine consumers was conducted, 1,533 (76%) of whom actually consumed chardonnay. This paper focuses only on those who consumed chardonnay. Males purchased and consumed larger quantities of chardonnay, although marginally more females consumed it. Chardonnay is considered to be characterized by full, lingering, and fruity flavors, as well as yellow color. Chardonnay is associated with dinner parties and at-home consumption. The vast majority of participants liked and had a positive perception of chardonnay. The target market for chardonnay is not only females; in fact, males appear to be the main consumers of this varietal by volume. Marketing and promotion campaigns should leverage the findings to retain current and win back other consumers. This is the first research to provide empirical explanations of consumer engagement with chardonnay, and to contribute evidence-based research in this regard.
The purpose of this research is to enrich our knowledge of the US wine market and provide insights into how usage rate segmentation can be enhanced by select innovative perspectives of current offerings. Data were collected through a 15-minute online survey of 910 US wine drinkers randomly selected from a panel of consumers. It was found that the "super core" segment not only drank wine more frequently, but also were more likely to drink other types of alcohol presented (beer, distilled spirits, and ready-to-drink cocktails), and at a greater frequency, "at least once a week" and "about once a week", than "marginal" drinkers. Differences between usage rate segments existed between sex and age generations. Female millennial "super core" consumers would increase wine consumption if the number of calories were reduced to fewer than 80 per 5 oz serving. Practical implications for a winery or wine retailer might include the potential to add these beverages to their product offering or bundling these beverages to create packages (allowing for mass customization, which is used often in retail) and appropriately marketing these offerings to their customers. Changes that may invoke a positive response are wine made from "sustainably farmed" or "naturally farmed" grapes, and certified carbon-free wine. From an originality viewpoint, this study is the first to investigate how usage rate segmentation can be enriched by means of variable cross-extension and examination.
