This paper examines two primary concerns AI poses for educational integrity and instructional design: academic dishonesty and the need for curriculum development. Students' rapid adoption of AI has outpaced institutional capacity to verify the authenticity of submitted work. Furthermore, effectively integrating AI into coursework demands labor-intensive revisions of syllabi and assignments to align with educational goals while promoting the ethical use of AI tools. We provide a general structure that guides instructors in the process of building ChatGPT integrated assignments that focus on economic models. We also develop two easily modified assignments that integrate AI into principles of microeconomics and macroeconomics courses. These assignments encourage students to use ChatGPT to complement their learning process. Specifically, we designed two assignments that cover central topics in introductory economics courses. The assignments serve as cut-and-paste options for other instructors to adopt into their curriculum to meet students where they are at. We close with a preliminary discussion of survey results where students report their use and enjoyment using AI.
