Bio
Serge Hercberg travaille dans le domaine de l'épidémiologie de la nutrition. Ses recherches concernent notamment les relations entre l’alimentation, l’état nutritionnel et la santé.
Il conduit d’abord de très nombreux travaux épidémiologiques d'observation sur des groupes à risque (femmes en âge de procréer, femmes enceintes, enfants, adolescents, sujets âgés, malades...) et sur des populations générales (France, Bénin, Equateur, Niger, Sénégal, Zaïre, Mali, Vietnam...). Dans ces populations, il étudie notamment le retentissement du déficit en fer chez les femmes et chez leurs enfants.
En 1984, il effectue un stage au Kansas University Medical Center, aux États-Unis, au cours duquel il parfait sa formation dans le domaine de l'épidémiologie des déficiences en micronutriments.
A partir de 1988, il assure la coordination de l'étude Nutrition/Santé Val-de-Marne.
En 1991 et 1992, chercheur-invité à l'université de Sherbrooke (Québec), il y développe des travaux associant les approches épidémiologiques et mécanistiques en nutrition, particulièrement dans le domaine de l'évaluation du statut minéral et vitaminique.
Serge Hercberg analyse ensuite le statut vitaminique de différents échantillons de la population française, ce qui le conduit à entreprendre et assurer la coordination nationale de l'étude “Supplémentation en vitamines et minéraux anti-oxydants” (SUVIMAX), visant à évaluer pendant plusieurs années les effets d’une association de vitamines anti-oxydantes et de minéraux, administrés à des doses nutritionnelles, sur la réduction du cancer et des maladies cardiovasculaires.
Il est également le responsable d’une étude européenne sur la comparaison, dans six pays européens, des facteurs de risque nutritionnels dans le domaine cardiovasculaire (projet EURALIM).
Serge Hercberg a été le co-investigateur de l’étude SUVIMAX 2 (étude des relations entre nutrition et vieillissement) et de l’étude SUFO.OM3 (essai d’intervention dans le domaine de la prévention des récidives cardio et cérébro-vasculaires par les omégas 3 et les vitamines du groupe B). Il est l’investigateur principal de l’étude NutriNet-Santé (évaluation des relations entre la nutrition et la santé et étude des déterminants des comportements alimentaires).
