个人简介
I am part of the Biochemistry and Plant Food Safety (BIOSEGVEG) group, and my research work has focused on the lines: a) the determination and characterization of bioactive and anti-nutritious compounds, as well as food processing and functional food collection; b) the study of allergens in plant foods (legumes and nuts) and c) nutritional assessment of plant foods (protein and oilseeds) in monogastric animals. Founding member of the Spanish Network on Nutrition and Health (NUTRISALUD)
