Lipase kinetics: On-line measurement of the interfacial area of emulsions

A method is presented for on-line characterization of the droplet-size distribution in a heterogeneous system for lipase-catalysed reactions. Using this procedure, enzyme kinetics were studied as well as the influence of the bile salt sodium deoxycholate and reaction products on the total interfacial area.
