Abstract
研究茶水中矿质元素的含量。采用电感耦合等离子体发射光谱(ICP-AES)技术,测定茶水中Ca、Mg、Fe、Cr、Se、Pb、As的含量,考察茶叶冲泡次数、时间及温度对检测结果的影响。结果表明,茶水中Ca、Mg、Fe含量较高,Cr、Se含量较低,未检出Pb、As。各矿质元素溶出量随冲泡次数增加而减少,随冲泡时间延长和温度升高而增加,90℃冲泡15min有利于茶叶中矿质元素的溶出。
