•Ultrasonic extraction method for wild apple fruit collected in Serbia was optimized.•Phenolic compounds were quantified with HPLC-PDA method.•Stability of found phenolic compounds was tested by simulated in vitro digestion.•Wild apples have potential as a valuable natural source of bioactive compounds.
