•Relative impact of GAC on mesophilic and thermophilic AD of food waste was studied.•GAC addition reduced lag phases for methane production under both conditions.•At both temperatures, microbial diversity and richness increased with GAC addition.•GAC amendment almost doubled the methane potential at mesophilic temperature.•Methane potential in thermophilic digestion was unaffected by GAC addition.
