•Citral was able to modulate the fish immune responses in a delivery mode-dependent manner.•Citral-loaded nanoemulsions and alginate nanoparticles reduced the total bacterial population in the fish intestine.•Citral reduced stomach pH (all delivery forms) and increased intestinal pH when loaded in nanoemulsions.
