•The study demonstrated the optimization of starch-based coating formulation for its application on apple fruit.•Fruit shelf life was investigated under the influence of applied coating stored at 20 °C and 5 °C + 1day at 20 °C.•The applied coating delayed the ripening associated changes in the fruit stored at low temperature.•The coating formulation offers a novel composition for improving the shelf life of apple fruit.
