The pilot-scale pervaporation equipment consists of a two-stage membrane system. The 1st-stage membrane system is applied to separate the ethanol and some of the aroma substances from the wine, and the remaining retentate is non-alcoholic wine (<0.5 vol.%) containing pigments and nutrient compounds.
