•The total concentration in tomato samples and their derivatives were evaluated.•The bioaccessibility was studied through an in vitro digestion process.•Ba, Cu, Fe, Mn, Pb and Zn presented concentrations bioaccessible.•Cd, Hg, Li and Mo presented concentrations < LOD for bioaccessibility method.•Tomato in natura and its derivatives have contribution for the DRI with other foods.
