•This is the first report of the composition of Galactolipids (GALs) in lettuce.•This is the first report of the composition of Triacylglycerols (TAGs) in lettuce.•The TAG composition changes dramatically from 3 to 8 weeks.•The TAG composition changes toward more unsaturated fatty acids.•The GAL composition remains rather constant across time and cultivars.
