摘要
•The diversity of commercial brewing yeast strains in beer categories was evaluated.•A data mining of 119,189 beer recipes and 443 commercial yeast strains was performed.•Frequency of ale or lager yeasts in dry or liquid formulations usage was accessed.•Brewers preferentially use dry ale strains formulations even for lager fermentations.•Development of new dry yeast strains is an underexplored industrial field.
