•Hyperspectral imaging detected adulterants in infant formulas from diverse brands.•Pretreatments were applied to the spectrum of each pixel in hyperspectral images.•Vanillin rich pixels were identified by the 3-variable model even at 0.01% content.•The limit of detection of the 6-variable quantitative model for melamine was 0.5%.
