•Lithium citrate as a food additive and a drug is studied by THz spectroscopy.•LC tetrahydrate and anhydrate have obviously different THz absorption spectra.•Temperature and heating time affect dehydration kinetics of LC tetrahydrate.•Dehydration enthalpy can be derived from the THz spectral analyses.
