Exploring the scientific interest for starch origin in South America from 2000 to 2020: Focus on non-destructive analytical methods

The global research trend on the interest in starch origin from 2000 to 2020 was analyzed with a bibliometric approach. With 1473 papers published during this period, the investigation showed a growing interest over time. The main countries working on that topic are China, USA, Brazil, and India, with a third of publications. Networks analysis based on keywords showed interesting facts. First, many scientific fields are concerned: agriculture, food, chemical analysis rheological properties. Second, for chemical analysis, multi-technique approaches are necessary to analyze the different aspects. In this chapter, the most used methods and their applications (infrared, NMR, and X-ray) are detailed.
