After extensive digestion of pleuromucoid with several proteolytic enzymes, a glycopeptidic fraction is isolated from the digest, which conserves carbohydrates of native protein. This fraction contains 31% hexoses, 3% fucose, 31.5% hexosamines, 21.6% sialic acid and 12% amino acids.
