The activities of protective enzymes ( POD, CAT, SOD) in Furong plum ( Prunus salicina Lindl. cv. Furong) and its physiological and biochemical indexes during cold storage were explored. The plums were packed with PE film with various thickness and then stored at different temperature. The results showed that the activities of these en- zymes remained at lower levels at lower temperatures (2~5℃) , and the presences of the peak of these enzymes were de- layed, the accumulating speed of harmful substances ( MDA) was reduced. However, the effect of PE film thickness on enzymes activities was not obvious. Only when all the enzymes were put in line, they could delay the progress of fruits ripening and senescence. The SOD activity can act as the fruit anti- decrepitude index. The time when the enzymes activ- ities begin to decline or the presence of the peak of MDA can be used as the indication of the ripeness and senescence degree of Furong plum fruits.
