个人简介
My research interests are quite broad since they cover the field of Food Microbiology, but also Biotechnology, Applied Microbiology and Fermentation Technology. My work focuses mainly on (1) Natural Antimicrobials from plant or microbial sources, such as plant polyphenols and other plant extract with antimicrobial-antioxidant activity, (2) Bioprotection and Control of Pathogens using Bdellovibrios, phages, lactic acid bacteria-bacteriocins, (3) Fermentative Production of Microbial Polysaccharides such as gellan, xanthan, mushroom polysaccharides, (4) Optimization of bioprocess conditions for production of single cell protein/mycoprotein, (5) Probiotic bacteria and novel prebiotic substances, (6) Improvement of shelf-life of food by Hurdle Technology, (7) Fermented Foods.
