Currently works at the Department of Food Science, in the Food Science and Technology Institute of Universidade Federal do Rio Grande do Sul. Nowadays, he is doing a PhD in Food Science and Technology in Brazil. Their most recent publications are about encapsulation efficiency and thermal stability of bioactive compounds microencapsulated by spray-drying using different combinations of wall materials. He has expertise in the development of functional food from functional ingredients.
