Ulf Svanberg is a Professor in Food and Nutrition Science at Chalmers. With a MSc in Food Science and Technology and PhD studies at Chalmers he continued his research to develop nutritious weaning foods for developing countries. In this capacity Ulf has a long record of collaboration with Universities and Centers in South-East Africa and he has been the main supervisor for more than 10 PhD-students. His studies in collaboration with Tanzania Food and Nutrition Centre has resulted in unique applications of malted cereal flours and lactic fermentation techniques in preparation of high nutritious cereal gruels for young children. These techniques were successfully incorporated in WHO/UNICEF supported nutrition programs in Tanzania. Specific areas of research interest have been to improve iron availability from cereal food products with the application of fermentation, yeast and enzyme technologies. He and his colleagues have recently discovered a new yeast variety to be used for baking of bread with improved iron availability. In collaboration with East-African Universities he has developed processing techniques to enhance the bioavailability of provitamin-A carotenoids from vegetables, fruits and orange fleshed sweet potato, and to preserve micronutrients and bioactive compounds in processed indigenous fruits from the region. Methods to improve the lactic acid fermentation technique of cereal based weaning foods was successfully developed to provide a hygienically safe product. He is a member of the Food and Nutrition Team of the Swedish-East Africa University Network (SWEAFUN), and he is presently enrolled as an expert consultant on a project with the aim “to assist food companies to develop nutritious, affordable and safe food products by knowledge transfer in production and product development for Low- and Middle-Income Countries with special focus on South-East Africa”.
