•Optical properties of melting and nonmelting peach fleshes were investigated.•Single integrating sphere with chemometrics was used to acquire μa and μ’s.•PLSR models got good results for predicting soluble sugar content.•μa showed better prediction performance than μ’s in 600∼1650 nm.
