Understanding local trends is essential for assessing consumer preferences and openness to new products. This study compared nine commercial dark and milk chocolates (with and without sucrose) from the Brazilian market, evaluating color, calorimetric, rheological, and texture properties. One-way ANOVA assessed overall differences, with significant results (p < 0.05) further examined by Tukey’s test. Texture, measured via normalized bending stress (σflex) to reduce geometric artifacts, showed dark chocolates with greater breakage resistance than milk chocolates; the xylitol sample (D) was the most resistant. All samples exhibited pseudoplastic behavior, confirmed by the Casson model (R² > 0.98). Milk chocolates generally showed higher rheological values (Casson yield stress, plastic viscosity, thixotropy), whereas dark chocolate Sample D (xylitol) had a significantly lower plastic viscosity (1.37 Pa·s). Sucrose substitution significantly altered color: dark chocolate Sample C (maltitol) presented a higher b* (8.54 ± 0.25) and lower Whiteness Index (20.59 ± 0.33), while milk chocolate Sample I (maltitol/polydextrose) differed from the control (E) in all color parameters, with a lower L* (31.44 ± 0.26). In calorimetry, sugar-free dark chocolates showed lower carbonization peak temperatures (e.g., 148.72 °C for Sample B) than the sucrose control (A, 219.44 °C), and milk chocolate Samples I and F did not carbonize within the 15–250 °C range. In conclusion, although sweetener choice, formulation, and ingredients induced statistically significant differences (p < 0.05) in flow limits and physical characteristics, the commercial products maintained quality control comparable to the sugar-based control commonly sold in Brazil.
Potato (Solanum tuberosum L.) is the third most important food crop worldwide and a primary staple food. Its high global production justifies the present study. The objective was to perform an agromorphological characterization of native potato cultivars to identify essential phenotypic patterns for the preservation of agrobiodiversity and genetic improvement. A total of 125 native potato cultivars were evaluated using 21 standardized qualitative and quantitative descriptors established by Bioversity International, including growth habit, leaf morphology, floral traits, and tuber characteristics. Four distinct phenotypic groups were identified: Group I (32%) with erect growth habit; Group II (54%) with semi-erect habit; Group III (13%) with decumbent habit; and Group IV (1%) with semi-rosette habit. Stem pigmentation was green (58%), green with pigmented spots (28%), and fully pigmented (14%). Floral morphology was rotate (42%), pentagonal (38%), and semi-star-shaped (20%). Petal coloration was lilac/purple (48%), light blue/white (36%), and pinkish red (16%). Tuber shape was round (31%), ovate (27%), and compressed (18%). Flesh color was white (44%), yellow (32%), and purple (24%). Finally, a phylogenetic tree and principal component analysis (PCA) were developed, revealing high homogeneity within the native potato cultivars (Group 1) and divergent outlier values (Groups 2, 3, and 4), highlighting the need for integrated analyses to explore genetic diversity.
Predictive microbiology enables the anticipation of microbial population behavior through mathematical models, a key tool in the development of fermented and functional foods. Black chuño, a traditional freeze-dried potato from the Andean region of Peru and Bolivia, is a substrate of cultural and nutritional value whose potential as a culture medium remains underexplored. The objective of this study was to evaluate the growth kinetics of Saccharomyces cerevisiae in a black chuño-based medium. Lyophilized strains were activated in a 2% sucrose solution and inoculated into the medium at 37±1 °C, with constant agitation for 7 hours. Microbial growth was measured by direct counting in a Neubauer chamber, expressed in cfu/ml and transformed to a logarithmic scale; the data were fitted to nonlinear models: Gompertz, Logistic, Log-logistic, and Weibull. Growth was sigmoidal, with differences in the latency and maximum rate parameters. The log-logistic model showed the best fit, with biomass reaching a maximum of 0.663 log cfu/ml at hour 7. The study confirms the viability of black chuño as a culture medium and highlights the usefulness of mathematical models in microbial kinetics.
The genus Dysdercus comprises key pests of cotton crops, causing economic damage by feeding on seeds. Therefore, the objective of the research was to characterize the species diversity of this genus. Through collection using a sweep net and active searching, 860 individuals were obtained, which were morphologically identified with an emphasis on the parameres of the male genitalia. Five species were identified: D. bimaculatus, D. honestus, D. fulvoniger fulvoniger, D. mimus distanti, and D. obscuratus garzkei. The morphometric analysis grouped them into three clusters. Although the overall abundance did not vary significantly, the species factor did affect abundance, with D. fulvoniger fulvoniger being significantly less abundant than D. bimaculatus. A canonical correspondence analysis indicated that the measured environmental variables did not explain the variation in species composition. We conclude that the complex of morphologically differentiated species in the region, along with their distribution and abundance, appears to be influenced by factors other than the evaluated environmental conditions.
The growing scarcity of freshwater, exacerbated by climate change and population growth, has driven the development and implementation of more efficient and sustainable desalination technologies. This study presents a systematic review of the main processes used to desalinate saltwater, including reverse osmosis, multistage distillation, electrodialysis, and nanofiltration. The technical principles of each method are described, along with their comparative advantages, energy requirements, operational limitations, and associated costs. Additionally, the environmental impacts—particularly brine generation and disposal—are analyzed, as well as current strategies to mitigate these effects. The article contextualizes the global application of these technologies, highlighting regions such as the Middle East, North Africa, and Latin America, where the demand for desalinated water has significantly increased. Emerging solutions that integrate renewable energy sources—such as solar, wind, and geothermal—are also explored, aiming to reduce the energy footprint and enhance economic feasibility. This review provides a comprehensive overview of the current state of desalination, its ecological implications, and the innovative prospects that position it as a strategic alternative to ensure water access in increasingly water-stressed scenarios.
The study examines the relationship between health education and access to drinking water in Urpaypampa, Ayacucho, considering economic, educational, social, and cultural factors that influence its availability and quality. Furthermore, it analyses the role of social work in raising awareness and managing water resources, recognising water as a fundamental human right and assessing its impact on public health. The hypothesis suggests that health education improves the quality of drinking water and community hygiene practices, although sociocultural and economic barriers may limit its effectiveness. The research adopts a mixed-methods approach and a descriptive-explanatory design, employing surveys with 25 household heads, semi-structured interviews, and participant observation, complemented by statistical analysis. The findings indicate that health education contributes to improving water quality and promoting hygiene practices, although resistance to chlorination and low participation in educational campaigns persist. The study concludes that it is necessary to strengthen awareness-raising strategies, improve water infrastructure, and adopt an intercultural approach to ensure the sustainable management of drinking water in the community.
Water quality is a determining factor in germination and in the assessment of ecotoxic effects on agricultural crops. This study evaluated the impact of water from the lower basin of the Canete River on the germination and initial growth of lettuce seeds (Lactuca sativa L.) using standardized bioassays as an environmental quality indicator. Physicochemical parameters (temperature, electrical conductivity, dissolved oxygen, pH, nitrate, ammonium, and total phosphorus) were analyzed at five sampling points: Puente Catapalla, Puente San Jer & oacute;nimo, Puente Socci, Puente Clarita, and Boca de Rio. A Randomized Complete Block Design (RCBD) was applied with six treatments and five replications. Through serial dilutions (100% to 6.25%), germination percentage, hypocotyl elongation, root growth, and germination index were evaluated as an integrated toxicity indicator. Results showed that water from Puente Clarita recorded the lowest germination index (62.33%) and root growth (36.77%), with statistically significant differences (p < 0.05) compared to the control, evidencing mild phytotoxicity. Although physicochemical parameters remained within the limits established by Peruvian environmental regulations (MINAM), a negative impact on the initial development of Lactuca sativa L. was observed. It is concluded thatthe germination bioassay is a sensitive tool for detecting sublethal effects not identified by physicochemical analysis, contributing to environmental monitoring and sustainable water resource management in the lower basin of the Canete River.
In order to describe bovine neosporosis as a livestock health problem in the Andes, the determinants, epidemiology and control of this parasitosis were identified, for this purpose a review of the literature published in the ScienceDirect collection was made, finding that the canine is the main determinant for bovine neosporosis, as a propagator in the stable of the protozoan Neospora caninum, other factors are related to the components of the production system and cattle breeds; It was observed that horizontal transmission of bovine neosporosis occurs through dog excreta contaminating cattle feed and vertical transmission occurs in young cows with low immunity, thus affecting their offspring, with fetuses being infected by N. caninum, causing abortions or reproductive problems such as return to estrus or temporary loss of estrus, a situation that causes important economic losses for cattle breeders. Through serological and molecular laboratory analysis, positive cases of N. caninum were diagnosed in the population, estimating seroprevalences of bovine neosporosis in different geographical areas of the world, with rural areas being more affected. The magnitude of the epidemiological association between neosporosis and its determinants was also measured by estimating odds ratios (OR), prevalence ratios (PR) and hazard ratios (HR), this information is useful for the development of control strategies based on specific biosecurity actions; meanwhile, effective treatments and vaccines are being developed.
The biometric traits of the genus Orestias and their relationship with physicochemical variables were characterized across nine high-Andean lakes and wetlands in the department of Cusco, Peru, through the sampling of 141 individuals between 2022 and 2023. Specimens were manually captured, euthanized with tricaine methanesulfonate, and preserved for analysis; total length and body weight were measured, while hydrogen potential, temperature, electrical conductivity, salinity, total dissolved solids, dissolved oxygen, and altitude were recorded at each site. An allometric model was fitted to the length–weight relationship, a principal component analysis (PCA) was applied to physicochemical variables, and a similarity network was constructed integrating geographic distances and environmental similarity. The length–weight relationship was adjusted to W = 0.00000889 · L^3.1030, with a determination coefficient of 0.9219, indicating slight positive allometry (exponent 3.103). The first two components explained 46.4% and 20.7% of the variance, contrasting systems with high conductivity and dissolved solids against higher-altitude systems with greater hydrogen potential and dissolved oxygen; a second axis was associated with salinity and temperature gradients. The network identified an interconnected core (Lucre–Huacarpay, Huaypo, Pomacanchi, Huasao) and peripheral high-altitude sites (Sibinacocha, Qoricocha). Results indicated that hydrological connectivity and environmental filtering modulated Orestias biometric variation. Based on these findings, applied measures were proposed for monitoring and conserving the studied populations.
The study evaluates the efficiency of activated Daucus carota biochar with calcium alginate beads to remove arsenic from synthetic samples, promoting sustainable technologies to decontaminate water. The interactions between adsorbent concentration, pH and contact time were analysed to optimise adsorption. The research, with a quantitative and applied approach, used three concentrations of biochar (1 mg/L, 2 mg/L and 3 mg/L), three pH levels (4, 7 and 9) and three contact times (30, 60 and 120 minutes). The results showed that the highest efficiency (93.263%) was achieved with 3 mg/L adsorbent at neutral pH (7) after 120 minutes. In contrast, the lowest efficiency (51.31%) occurred at pH 9 with 1 mg/L adsorbent in the same time. In addition, the contact time significantly influenced adsorption, improving progressively up to 120 minutes. These findings highlight that activated biochar from Daucus carota is an effective adsorbent to remove arsenic, especially under neutral pH conditions and for prolonged periods of time. Its use represents a viable and sustainable alternative to treat contaminated water, contributing to efficient environmental management strategies and reduction of heavy metals in aquatic ecosystems, in line with sustainable development objectives.
This research analyzes the role of traditional water sowing and harvesting practices as an effective and sustainable strategy for climate change adaptation in the rural community of Cahuide, located in the Andean region of La Libertad, Peru. The main objective is to assess the impact of these ancestral techniques on water availability and community resilience in the face of increasing climatic variability. Through a non-experimental, cross-sectional, and descriptive methodological design—combining field observation, interviews with local stakeholders, and secondary data analysis—it was found that the implementation of natural infrastructure, such as qochas and reservoirs, has significantly improved water availability for both domestic consumption and agricultural use, while also strengthening ecosystem services and social cohesion within the community. The study highlights the value of traditional ecological knowledge as a key tool to address contemporary environmental challenges. Water sowing and harvesting is proposed as a viable alternative to centralized and privatized water management models, emphasizing the urgency of incorporating these community-based practices into public policies on water governance and climate change adaptation at both local and global levels.
