目的 探讨田七总色素的体外抗氧化活性.方法 以蒸馏水为溶剂,从田七中提取总色素;采用比色法分别测定田七总色素清除DPPH·、O-2·和·OH三种自由基的作用,以及对Fe3+的还原能力.结果 田七总色素对三种自由基都有一定的清除作用,清除DPPH·、O-2·自由基的EC50分别是0.17 mg/ml、0.24 mg/ml;当色素浓度为0.15 mg/ml时,其对DPPH· 清除率为45.03% 、对O-2·为23.48% 、·OH 清除率为3.71%,其对三种自由基的清除能力排序为DPPH· > O-2· >·OH;对Fe3+ 也具有较强的还原能力.结论 氧自由基清除率与田七总色素浓度存在明显的量效关系,清除作用随着总色素浓度的增加而增强.还原Fe3+能力也随总色素的浓度增加而增强.
Study on the antioxidant of the flavanone in the Longan leaves.The flavonoids were extracted with w(Ethanol) =95 % as the solvent from Longan leaves by water bath backflow.It will determine the flagstone's scavenging process acting on DPPH.,.OH and O2-.with the Spectrophotometry,and the reduction of Fe3 + ability.Total flavanone from Longan leaves have significant scavenging effect to three kinds of free radicals,the result of scavenging process is that DPPH.>.OH > O2-.;moreover it also have strong ability of reduction to Fe3 +.Clearance and concentration obvious concentration-response relationship.When the content of the total flavanone of Longan leaves was ρ(Flavanone)=0.07 mg/L,the clearance rate of DPPH.,.OH and O2-.was 58.8 %,52.5 % and 16.5 %.Evident reduction energy of the flavanone was increasing by the concentration.

Methods Using the distilled water as the solvent to extract pigments from the jasmine leaves; It will determine the scavenging process of pigments in the jasmine leaves acting on DPPH·,O2-· and ·OH with the spectrophotometry and the reduction of Fe3 +ability. Results Total pigments from jasmine leaves have significant scavenging effect to three kinds of free radicals,the result of scavenging process is that DPPH· >O2-· > ·OH; moreover,they also have strong ability of reduction to Fe3 +. Conclusion Clearance and concentration obvious concentration-response relationship. When the content of the total pigments of the jasmine leaves was ρ( Pigments) = 3. 5 mg /ml,the clearance rate of DPPH·,O2-oand ·OH was 49. 3%,55. 1% and 20. 9%. The reduction ability of Fe3 +to the pigments was enhanced when there concentration was increasing.
目的:为生产各种食用品、化妆品、医药药品等色素新产品提供重要原料,研究香附色素的提取条件和稳定性.方法:以香附为材料,以蒸馏水作提取剂,用紫外分析法研究色素稳定性.结果:以蒸馏水为提取剂,料液比为1:100,在室温下浸泡24小时.结论:该色素在215nm处有最大吸收峰,其水溶性较好,强酸性物质对该色素的稳定性影响较大,但热稳定性、耐光性良好.葡萄糖、淀粉对色素的稳定性影响较大,而醋酸、防腐剂、蔗糖无明显影响.氧化剂、还原剂中除过氧化氢对色素的影响明显外,其他均无明显影响.除Fe3+外,金属离子对其影响较小.

Objective: To study the antioxidant effect of the pigments in Prunella vugaris.Methods: Using distilled water as the solvent to extract pigments from Prunella vugaris.It will determine the scavenging process of pigments in Prunella vugaris acting on DPPH.、O2-.and.OH with the spectrophotometry;and the reduction of Fe3 + ability.Results: Total pigments from Prunella vugaris have significant scavenging effect to three kinds of free radicals,the result of scavenging process is that DPPH.>.OH > O2-.;moreover,they also have strong ability of reduction to Fe3 +.Conclusion: Clearance and concentration obvious concentration-response relationship.When the content of the total pigments of Prunella vugaris was ρ(Pigments) = 0.13 mg / mL,the clearance rate of DPPH.、O2-.and.OH was 28.3%、4.1% and 17.9%.The reduction ability to Fe3 + of the pigments was enhanced when their concentration was increasing.
