Polysaccharides of Lupinus angustifolius (Bryansk 123 and Krystall varieties) and Lupinus luteus (SG-91 variety) are extracted and hydrolyzed. Their chemical composition and structural features are studied. Optimal conditions for extraction, hydrolysis, and purification of the lupine polysaccharides are found. Structural features of the isolated pectins are determined based on 13 C NMR and IR spectroscopy.
