The growing demand for functional foods and personalized nutrition has increased interest in three-dimensional printing (3DP) as a technology for developing customized food products. Jostaberry (Ribes × nidigrolaria), a fruit rich in antioxidant compounds, has rarely been explored in 3DP food applications. This study evaluated the suitability of jostaberry for producing 3DP snacks and investigated the effects of starch type (corn or wheat) and storage (12 days/4 °C) on physicochemical properties, bioactive compounds, antioxidant capacity, and microbiological stability. Both starch type and storage significantly influenced product characteristics, whereas storage was the main factor affecting stability. During storage, moisture loss, changes in total soluble solids, color differences, and reductions in organic acid concentrations were observed. Although condensed tannins and anthocyanins decreased by 27.6% and 37.3%, respectively, total phenolic content remained relatively stable, suggesting compound-specific changes rather than an overall loss of phenolics. Compared with wheat starch, corn starch resulted in higher total flavonoid and hydroxycinnamic acid contents, whereas wheat starch retained higher malic acid concentrations. Antioxidant capacity also gradually decreased during storage. Despite these changes, the 3DP snacks remained microbiologically stable and complied with food safety requirements throughout the storage period. These findings demonstrate that jostaberry is a promising functional ingredient for 3DP snacks, providing high bioactive potential and acceptable refrigerated storage stability.
In horticulture, a delayed shipment or failed food-safety check can rapidly cut off market access, yet strategic risk management remains weakly developed. This paper examines how artificial intelligence (AI), agritech, and business model innovation can reduce uncertainty and strengthen resilience across horticultural value chains. Using a structured conceptual review, it integrates six literature streams: agricultural risk, supply-chain risk management, strategic and enterprise risk management, farming-system resilience, digital innovation and AI, and business model innovation. The synthesis connects risk exposure to five digital functions (sensing, predicting, verifying, coordinating, and deciding) to dynamic capabilities, business model and governance conditions, and resilience outcomes. It develops five connected propositions concerning the conversion of information into action, credible digital verification, adoption conditions, market-access resilience, and business-model-enabled shared capability. Market-access resilience is introduced as the capacity to maintain or restore verified quality, food-safety assurance, traceability, compliance, and buyer relationships during disruption. The propositions are theoretically derived and empirically informed, providing a foundation for further empirical validation, particularly of the complete market-access and business model relationships. The findings imply that digital technologies contribute to resilience only when supported by coordinated action, sound data governance, human oversight, and viable, inclusive delivery models.
Genomes record past climatic impact on species’ range shifts, admixture, refugial isolation, and adaptative evolution. However, these processes are poorly understood in perennial herbaceous species forming a dominant group of temperate flora. We present a demographic history of the perennial herb woodland strawberry (Fragaria vesca L.) reconstructed from 200 genomes spanning most of its European range. Temporal population structure reveals a strong division into western and eastern genetic clusters along a longitudinal climatic gradient, with eastern core populations showing greater resilience during glaciations. Divergence patterns indicate that postglacial recolonization of western and eastern Europe occurred from distinct refugia in multiple waves. The current largest, admixed populations from the Mediterranean to northern Europe form a continuous chain maintained by east–west gene flow through Central Europe, with historical migration patterns indicating comparable connections during earlier interglacials. Our reconstruction of woodland strawberry’s climatic history with high temporal resolution reveals how the late Pleistocene core-periphery dynamics shaped its survival and genome evolution under climate change. The data points to populations that are essential for maintaining the long term genetic diversity of the species and opens new avenues to understand climatic adaptation of temperate flora. Population genomics of European woodland strawberry reveal distinct western and eastern genetic clusters with contrasting demographic histories across multiple glacial-interglacial cycles.
Postharvest shelf life has always been one of the main shortcomings in the cultivation of perishable fruit, of which strawberries are one of the most important. Hence, this study aimed to maintain the postharvest quality of fully ripe strawberries with the utilization of sustainable and edible coatings made of chitosan and chitosan infused with apple pomace extract. Fruit quality was assessed on days 0, 2, 4, and 9 following the treatment. A sensory evaluation was also performed on day 0 and day 4 and this included visual (freshness, color and glossiness) and organoleptic traits (hardness, texture, flavor, juiciness and sugar/acid ratio perception). Overall, the coating application resulted in the fruit quality improvement in terms of bioactive compound contents and antioxidant capacity. Furthermore, a decrease was recorded in the number of yeasts and moulds, and in the aerobic mesophilic count. Most differences were recorded on days 4 and 9 when the juice of treated strawberries had significantly higher contents of total phenolic compounds, total flavonoids and total anthocyanins, as well as antioxidant capacity. The total anthocyanin content and total flavan-3-ol content determined in the residue after juice separation were also maintained throughout the storage period. Sensory evaluation tests conducted on day 4 resulted in coated strawberries rated with higher scores for all of the sensory parameters when compared to the control.
Strawberries (Fragaria × ananassa Duch.) are rich in bioactive compounds and antioxidants, making them promising for functional food development. This study examined how fruit size (<15 g, 15–30 g, >30 g) affects the bioactive composition and antioxidant activity of fresh strawberries and three-dimensional (3D)-printed strawberry-based snacks using the “Albion” cultivar. Smaller fruits (<15 g) showed the highest total phenolic (134.02 ± 1.76 mg GAE/100 g) and anthocyanin contents (17.74 ± 0.26 mg Pg-3-Glc/100 g), with anthocyanins better retained in 3D-printed products (15.96 ± 0.30 mg Pg-3-Glc/100 g). Although 3D printing reduced anthocyanins by ~26%, antioxidant activity remained stable (DPPH–fresh: 295.73 ± 0.21 µmol TE/100 g vs. 3D-printed: 299.06 ± 0.21 µmol TE/100 g). A significant inverse correlation between pH and anthocyanins (r = –0.999, p = 0.02) emphasized acidity as a key factor in pigment stability. These results highlight the importance of fruit size and processing conditions for maximizing the nutritional value of 3D-printed functional foods.
Exploring a species paleohistory is crucial for understanding its responsiveness to climatic events, identifying drivers of adaptation, and developing effective biodiversity conservation strategies in the face of ongoing climate change. We analyzed 200 genomes of the perennial herb woodland strawberry (Fragaria vesca L.) from across Europe and investigated the population structure and demographic history of the species during past geoclimatic events. We found a clear division of populations into western and eastern genetic clusters, indicative of distinct glacial refugia and adaptations to variation in temperature seasonality. The eastern core populations were several times larger (defined as effective population size, NE) than populations in other regions, showed no evidence of inbreeding, and were resilient to several glacial maxima. However, we observed decreasing NE and higher inbreeding in populations toward range edges, particularly in the north, where these individuals went through bottlenecks during glaciations. Population divergence suggested that western and eastern Europe were colonized from separate refugia in multiple waves during the Holocene, while the largest current populations from the northern Mediterranean to southern regions of the Nordic countries formed a connected population chain with gene flow between eastern core populations and western Europe, primarily occurring through Central Europe. Similar patterns of colonization and hybridization may have occurred during past interglacial periods, contributing to the present-day population structure of woodland strawberry. We suggest that the unprecedented resolution of the species climatic history across six glacial-interglacial cycles presented here holds the promise of transforming the general understanding of species paleohistory through geoclimatically tracing ancestral haplotypes. ### Competing Interest Statement The authors have declared no competing interest.
The modern analytical technique of Fourier-transform mid-infrared spectroscopy (FT-MIR) has found its place in routine wine quality control. It allows rapid and nondestructive analysis, with easy sample preparation and without the need for chemical pretreatment or expensive reagents. The objective of this research was to apply these advantages to fruit wines in order to create a tool for the authentication of fruit wines produced from different fruit species (chokeberry, blackberry, and raspberry). The aim of this work was to establish a chemometric model from FT-MIR spectra and to find a “fingerprint” of specific fruit wines, enabling the classification of fruit wines by plant species. Physicochemical analysis of 111 Croatian fruit wine samples (38 liqueur fruit wines and 73 fruit wines) revealed content levels of the following parameters: alcoholic strength (5.0–15.2% vol.), total dry extract (60.4–253.3 g/L), total sugars (1.2–229.9 g/L), pH (3.13–4.98), total acidity (4.2–18.3 g/L) and volatile acidity (0.2–1.5 g/L). For statistical data processing, spectral ranges between 926 and 1450 cm−1 and between 1801 and 2951 cm−1 were used. The first principal component (PC1) explained 70.4% of the observed variation, and the second component (PC2) explained 16.7%, clearly separating chokeberry fruit wines from blackberry and raspberry fruit wines. Soft Independent Modeling Class Analogy (SIMCA) was performed following the development of a PCA model showing that the chokeberry and blackberry wine samples form clearly separated clusters. Key discriminators for classifying chokeberry vs. blackberry wines were identified at 1157, 1304, and 1435 cm−1, demonstrating high discrimination power (DP 26, 17, and 14, respectively). FT-MIR spectroscopy, in combination with chemometric methods, has shown promising potential for the authenticity assessment of fruit wines.
This work aimed to investigate the influence of high-power ultrasound (HPU) technology on the stability of bioactive compounds in strawberry juices obtained from fruits with different stages of ripeness (75% vs. 100%) and stored at 4 °C for 7 days. HPU parameters were amplitude (25, 50, 75, and 100%), pulses (50 vs. 100%) and treatment time (5 vs. 10 min). Amplitude and pulse had a significant effect (p ≤ 0.05) on all bioactive compounds except flavonols and hydroxycinnamic acids. The treatment duration of 5 min vs. 10 min had a significant positive impact on the content of anthocyanins, flavonols and condensed tannins, while the opposite was observed for total phenols, whereas no statistically significant effect was observed for hydroxycinnamic acids. The temperature changes during HPU treatment correlated positively with almost all HPU treatment parameters (amplitude, pulse, energy, power, frequency). Optimal parameters of HPU were obtained for temperature changes, where the highest content of a particular group of bioactive compounds was obtained. Results showed that by combining fruits with a certain ripeness and optimal HPU treatment, it would be possible to produce juices with highly preserved bioactive compounds, while HPU technology has prospects for application in functional food products.
The brown marmorated stink bug, Halyomorpha halys Stål, is an invasive Pentatomidae species that causes damage to economically important agricultural crops. It originated in East Asia but has successfully spread to many European countries. It has been present in Croatia since 2017, and its first mass emergence was detected in a soybean field in 2019. Therefore, the aim of this study was to determine the occurrence and population size of H. halys in perennial crops in important fruit growing areas in Croatia. According to the monitoring data, H. halys was detected in all surveyed areas and crops (apple, apricot, cherry, fig, grapevine, pear, plum, olive, and hazelnut). The largest population size was detected for hazelnut in the locality of Tovarnik, Vukovar-Syrmia County (79 individuals), for pear in the locality of Marijanci, Osjek-Baranja County (31 individuals), and for apple in the locality of Staro Čiče, Zagreb County (25 individuals). In view of the fact that the weekly catches at some monitoring sites exceeded the established treatment threshold, control measures must be taken to prevent an increase in the population and significant damage in the future. In addition to hazelnuts, crops such as pears, apples and cherries are particularly threatened by this pest.
Sekundarni metaboliti biljaka imaju važnu ulogu u reakciji biljaka na abiotički i biotički stres. Neke od bioaktivnih komponenti imaju izražena insekticidna svojstva, pa onda govorimo o insekticidnim biljkama poput dalmatinskog (Tanacetum cinerariifolium /Trevir./ Sch. Bip.) i kavkaškog buhača (Tanacetum coccineum (Willd.) Grierson) (aktivne komponente - piretrini), duhana (nikotin), neema (azadirahtin) i dr. Botanički insekticidi su uglavnom kraće perzistentnosti, pa su na osnovi njihove kemijske strukture razvijeni stabilniji sintetski insekticidi – piretroidi i neonikotinoidi, S ograničavanjem primjene kemijskih insekticida, botanički insekticidi dobivaju sve značajniju ulogu i u konvencionalnoj zaštiti bilja, ne samo ekološkoj. Posebno su značajni prirodni piretrini. Zbog brze razgradnje imaju kratku karencu što je često nedostatak, ali je i prikladno za zaštitu bilja prije same berbe, što je posebno prikladno kod suzbijanja octene mušice ploda.
3D printing technology (3DP) as additive manufacturing is an innovative design technology that can meet the individual nutritional and sensory needs of consumers. Therefore, the aim of this work was to apply 3DP in the production of a strawberry-based functional product with the addition of two hydrocolloids (corn and wheat starch) in three proportions (10, 15 and 20%) and to investigate the influence of 3DP process parameters on physico-chemical and textural properties, as well as the bioactive and antioxidant potential and microbiological stability, with(out) the addition of natural antimicrobial agents. Starch type had a significant effect on all tested bioactive compounds, as well as on starch content, except for total phenolic and hydroxycinnamic acid contents. Considering the content of bioactive compounds and antioxidant capacity, program 2 proved to be more suitable than program 1. All samples exhibited good textural properties, a high degree of stability and minimal geometric deviations. Regarding microbiological safety, no pathogenic bacteria were found in the 3DP samples during storage. The 3DP sample with added citral at a concentration of 75 mg L-1 showed the best microbiological quality. Ultimately, 3DP can be successfully used for the production of new strawberry-based functional products.
Početkom 21. stoljeća borovnice zbog svojih nutritivnih svojstava plodova postaju popularne među potrošačima, a što povećava njihovu potražnju. Kultivirane borovnice stoga zauzimaju sve veći značaj kako u svjetskoj tako i u hrvatskoj proizvodnji voća. Mineralni sastav plodova je važna komponenta koja utječe na kvalitetu plodova i njihovu nutritivnu vrijednost. U ovom radu napravljen je prikaz mineralnog sastava plodova borovnice, kao i nutritivne vrijednosti. Na temelju proučene literature utvrđeno je kako su u plodovima borovnice najzastupljeniji makroelementi dušik i kalij dok su kod mikroelemenata to mangan i željezo. Obrađeni su i najvažniji čimbenici koji imaju utjecaj na mineralni sastav borovnica, kao što su: sorta, klima, tlo, agrotehnički i pomotehnički zahvati. Odabirom i upravljanjem navedenih čimbenika moguće je povećati kvalitetu ploda, ali i utjecati na mineralni sastav plodova borovnica.
Wild Himalayan figs (Ficus palmata Forsk.), native to East Asia and the Himalayan region, are closely related to the well-known cultivated fig (Ficus carica L.), which is grown mainly in the Mediterranean region. The Pakistani state of Azad Jammu and Kashmir has a rich variety of figs. However, no comprehensive study has been carried out to utilise the diversity of these wild figs for possible use in sustainable fruit production. Therefore, the present study was designed to assess the variability of 35 wild fig accessions using quantitative and qualitative traits. Descriptive statistics were used to measure quantitative characteristics, while the coefficient of variance (CV %) was analysed using SAS® version 9.1. A principal component analysis (PCA) and multivariate analysis were performed using R Studio (v1.1.4). Pearson correlation coefficients between characteristics were obtained using SPSS software. The studied accessions showed high variability and the coefficient of variation (CV) ranged from 4.46–14.81%. Days to maturity varied from 71 to 86, leaf area from 38.55 to 90.06 cm2. The fruit length, fruit diameter and fruit weight ranged from 11.25 to 29.85 mm, 11.85 to 27.49 mm and 2.65 to 9.66 g, respectively. The photosynthetic activity and total chlorophyll content also varied from 7.94 to 10.22 μmol CO2 m−2s−1 and 37.11 to 46.48 μgml−1. In most of the fig accessions studied, apical dominance was found to be ‘absent’ while fruit shape was observed to be ‘globular’. A strong correlation was observed between all the studied characteristics. In the PCA analysis, all 35 fig accessions were distributed in four quadrants and showed a great diversity. This could be a valuable gene pool for future breeding studies and provide improved quality varieties. Wild Himalayan figs from the wild are well adapted to local pedoclimatic conditions and, combined with easy propagation and production can contribute to the local economy and have a significant impact on the socio-economic and ecological balance. The results of this study show high variability in some of the studied traits of 35 accessions from different parts of Northeast Pakistan, indicating their good potential for further enhancement and utilisation in sustainable agricultural production.
Citrus fruits contain numerous naturally occurring compounds such us flavonoids, limonoids, furanocoumarins, vitamins, carotenoids, organic acids, and amines. Citrus fruits are classified as acidic fruits because their soluble solids consist mainly of organic acids and sugars, which are used as the main index of maturity and as one of the main analytical measures of flavour quality. Organic acids profiles were estimated in five cultivars ('Zorica', 'Chahara', 'Kawano Wase', 'Owari', and 'Saigon') of mandarins (Citrus reticulata Blanco) from Neretva Valley by HPLC-DAD. Citric acid was the dominant acid ranging from 8.53 to 13.18 g L-1 followed by malic acid (ranging from 447.76 to 902.48 mg L-1), ascorbic acid (ranging from 286.82 to 389.02 mg L-1) and oxalic acid (from 47.04 to 98.03 mg L-1). Phenethylamine alkaloids have attracted considerable interest in recent years because of their potential role in obesity prevention. Of all the phenethylamine alkaloids, only synephrine is detected in Satsuma mandarin juices. The highest content of synephrine was found in 'Zorica' (146.1 mg L-1), followed by 'Kawano Wase' (121.9 mg L-1), 'Chahara' (109.6 mg L-1), 'Owari' (95.7 mg L-1) and 'Saigon' (94.1 mg L-1) from HPLC-DAD.

The strawberry tree (Arbutus unedo L.) is a Mediterranean plant known for the traditional use of its fruits and leaves due to their health benefits. Thus, it has been used for years in folk medicine to relieve various health conditions such as urological and kidney problems, dermatological, cardiovascular and gastrointestinal diseases. The fruits are traditionally used for making jams, jellies, and strong alcoholic beverages, while the leaves are mostly used for preparing tea. Since the leaves were more researched, previous results indicated that they have important biological effects, so further research should focus on the fruits. Due to its chemical composition, rich polyphenolic profile and the biological potential derived from it, the plant has great prospects for the production of functional foods and nutraceuticals. However, the plant's potential is underutilized in terms of processing. Therefore, this review summarizes the properties and the potential of the fruits and leaves of A. unedo and their possible benefits for processing with respect to agricultural, nutritive, biological and economic values.
Strawberries (Fragaria x ananassa Duch. cv. 'Albion') were harvested at two stages of ripeness (75% vs. 100%) and their physicochemical, sensory, toxicological, and bioactive properties were evaluated before and after processing into juice. The fresh fruits and their by-products were also evaluated. During processing into juice, the color change was higher in the fully ripe fruits, confirming the encouraging prospects for using the less ripe strawberries for processing. The analysis of heavy metals (Cu, Zn, Ni, As, Cd, Pb) was carried out, and in juice and by-product samples of 100% maturity, only Pb was higher than the MDK. Of the 566 pesticides analyzed, only cyprodinil was found in the by-products of the strawberries at 75% maturity, while pyrimethanil was detected in all samples. Fresh strawberries of both ripeness levels were rated similarly to the corresponding juices for all sensory attributes studied, indicating that sensory perception was not affected by processing. However, ripeness was found to be an important factor influencing most sensory attributes. The by-products were the materials with the highest levels of all bioactive compounds. Considering all quality parameters evaluated, the chemometric evaluation confirms the suitability of 75% ripe strawberries for processing into functional juice, which could be important for the juice industry.
Biostimulants are (non-nutrient) substances or microorganisms that improve plant nutrition processes and help reduce the effects of stress caused by abiotic and biotic influences. They can be microbial (beneficial bacteria and fungi) and non-microbial (humic acids, amino acids, seaweed extracts, chitosan and inorganic biostimulants). Through their various mechanisms of action, biostimulants enhance the efficiency of nutrient utilization, the stress resistance of plants and have a positive effect on the qualitative characteristics of plants. Due to the limitation of applicable pesticides and fertilizers, biostimulants are also a part of the alternative solutions.
The aim of this study was to investigate the influence of high intensity pulsed electric field (HIPEF) technology on the stability of total phenols, anthocyanins, hydroxycinnamic acids, flavonols, and condensed tannins in strawberry juices (Fragaria x ananassa Duch. cv. ‘Albion’) with different ripening stages (75% and 100%) and stored at +4 °C for 7 days. The HIPEF parameters studied were: (i) electric field strength (40 and 50 kV cm−1), (ii) frequency (100 and 200 Hz), and (iii) treatment duration (3 and 6 min). Of the HIPEF parameters studied, electric field strength and frequency had a statistically significant effect on the content of all phenolic compounds. Treatment duration showed no statistically significant effects on phenolic compounds except for flavonols and condensed tannins. Storage had a positive effect on the stability of most of the phenolic compounds, with the exception of flavonols. Optimization of HIPEF processing showed that strawberry samples at both ripeness levels were suitable for HIPEF treatment to obtain functional fruit juices with a high content of polyphenols.
Biostimuatori su (ne-hranjive) tvari ili mikroorganizmi koji pospješuju procese hranidbe biljaka i doprinose smanjenju posljedica stresa uzrokovanog abiotičkim i biotičkim čimbenicima. Mogu biti mikrobni (korisne bakterije i gljive) i nemikrobni (huminske kiseline, aminokiseline, ekstrakti morskih algi, kitozan i anorganski biostimulansi). Različitim mehanizmima djelovanja biostimulatori potiču učinkovitije iskorištavanje hraniva, otpornost biljaka na stres i povoljno djeluju na kvalitativna svojstva biljaka. Uslijed restrikcija u primjeni sredstava za zaštitu bilja i gnojiva, kao dio alternativnih rješenja pojavljuju se biostimulatori.
