Objectives:To examine associations between taste propensity and body mass index (BMI) in elderly individuals (≥ 60 years), compare taste propensity between obese and nonobese groups, and explore gender-related differences to inform dietary interventions. Methods:A cross-sectional study was conducted with 231 elderly participants (aged ≥ 60 years) in Zanjan city, categorized into obese (n = 80) and nonobese (n = 151) groups. Taste propensity was assessed using a validated food frequency questionnaire (FFQ) evaluating six taste groups: sweet, salty, sour, bitter, umami, and fat. Pearson's correlation and independent samples t-tests were used to examine relationships between BMI and taste propensity. Results:Inverse correlations were observed between BMI and sweet (r = -0.172, p = 0.009), bitter (r = -0.139, p = 0.035), and umami (r = -0.168, p = 0.010) taste propensities; whereas there were positive correlations between BMI and salty (r = 0.204, p = 0.002) and fat (r = 0.167, p = 0.011) taste scores. Moreover, obese participants showed a lower propensity for sweet and umami tastes (p = 0.049; p < 0.001), but a higher propensity for salty and fat tastes (p = 0.029; p = 0.024) compared to nonobese individuals. A gender difference was observed in umami propensity among obese participants, with women showing a stronger propensity (p = 0.033). Conclusions:Obesity in the elderly is associated with altered taste perception, particularly an increased propensity for salty and fatty foods and a decreased propensity for sweet and umami tastes. These findings may inform tailored dietary interventions in older adults.
Every day, a significant amount of fat is excreted through the skin in the form of sebum. However, this significant calorie loss, which may amount to up to 500 kcal/day in individuals with greasy skin, has often been disregarded in obesity studies. The most important theoretical models of the pathogenesis of obesity, the Energy Balance Model and the Carbohydrate-Insulin Model, need to be re-evaluated taking this into account, and "energy loss through the skin" should be included in the energy-balance equation. This overlooked pathway might partially explain discrepancies in energy balance measurements. Factors affecting sebum production may also affect weight; however, this requires further research.
Despite all the advances in our knowledge regarding obesity, our understanding of its etiology is still far from complete. This study aimed to evaluate the association of serum irisin levels with physical activity and some of the metabolic syndrome-related biomarkers among obese people with low-calorie intake and non-obese people with high-calorie intake. Obese and non-obese healthy individuals with respectively low and high-calorie intakes were recruited. Irisin and other biomarkers were measured using standard biochemical methods. Participants’ physical activity was evaluated by administering the International Physical Activity Questionnaire (IPAQ). To analyze the body composition of the participants, a standard body composition device (ioi 353) was applied. Logistic regression was used to calculate the odds ratio (OR) and to examine the effect of confounders such as age, sex, genetics, and activity. Data from the seventy-seven participants were included in the final analysis. The mean age of the participants in the obese and non-obese groups was 38.33 ± 14.88 and 30.24 ± 13.37 years, respectively. Participants in the obese group had lower physical activity compared to the non-obese group (3395.38 ± 2801 MET-min/week vs. 6015.18 ± 3178 MET-min/week; p < 0.001). The Irisin concentration in the obese and non-obese groups was 7.84 ± 2.49 ng/ml and 8.06 ± 1.89 ng/ml, respectively, which wasn’t significantly different (p = 0.66). We observed a noteworthy and favorable association between irisin concentration and total body water (TBW), lean body mass (LBM), and soft lean mass (SLM) in the non-obese group. These data indicated that although obese participants were relatively inactive compared to non-obese individuals, circulating irisin level wasn’t significantly different between the two groups. No irisin difference between obese and non-obese groups. Physical activity unrelated to irisin levels. Positive irisin correlation with lean mass in non-obese group. Triglycerides and cholesterol lower in non-obese group. Irisin linked to TSH and glucose levels in obesity.
Introduction:Depression is a psychological condition characterized by a persistent low mood. This study investigates the relationship between depressive symptoms and food preferences in undergraduate students. Methods:A cross-sectional design was employed among 502 students at Zanjan University of Medical Sciences. Data collection included validated questionnaires on food preferences, depression levels (Beck Depression Inventory), and physical activity (IPAQ), along with anthropometric measurements. Food preferences were analyzed for six groups: grains, fruits, vegetables, dairy, meat/fish, and snacks. Depression severity was categorized into six levels based on BDI scores: normal (1-9), mild (10-16), borderline (17-20), moderate (21-30), severe (31-40), and very severe (41-63). Depression risk was defined as the odds of belonging to a higher Beck Depression Inventory (BDI) category. Results:Participants with severe depression had lower preferences for grains, fruits, and vegetables but higher preferences for snacks. Adjusted analyses revealed that higher preferences for fruits (OR: 0.79; 95% CI: 0.68-0.98) and vegetables (OR: 0.81; 95% CI: 0.71-0.94) were significantly associated with reduced depression risk, while snack preferences increased risk (OR: 1.28; 95% CI: 1.03-1.68). However, the association between grain preferences and depression risk was not statistically significant after adjustment (OR: 0.82; 95% CI: 0.74-1.03). Conclusion:These findings highlight the bidirectional link between diet and mental health, underscoring the importance of dietary interventions in mental health strategies.
Objective This study was designed to evaluate the impact of VLCKD on cardiovascular risk factors in patients with T2DM. Methods Until March 2024, extensive searches were conducted on PubMed, Scopus, Web of Science, Embase, and other relevant databases. The purpose was to identify clinical trials examining the impact of VLCKD on glycemic control, lipid profile, and blood pressure. The GRADE (Grading of Recommendations Assessment, Development, and Evaluation) method was used to assess the evidence’s degree of certainty. Results Our initial search found a total of 2568 records and finally 29 trials were included in final analysis. Our results showed that adherence from VLCKD led to significant reduction in fasting blood sugar (WMD= -11.68 mg/dl; 95% CI: -18.79, -4.56; P = 0.001), HbA1c (WMD= -0.29; 95% CI: -0.44, -0.14; P < 0.001), HOMA-IR(WMD= -0.71; 95% CI: -1.14, -0.29; P = 0.001), insulin (WMD= -1.45; 95% CI: -2.54, -0.36; P = 0.009), triglyceride (WMD= -17.95; 95% CI: -26.82, -9.07; P < 0.001), systolic blood pressure (WMD= -2.85, 95% CI: -4.99, -0.71; P = 0.009) and diastolic blood pressure (WMD= -1.40; 95% CI: -2.66, -0.13; P = 0.03). We also found a significant increase in high-density lipoprotein (HDL) level after adherence from VLCKD diet (WMD = 3.93, 95% CI: 2.03, 5.84; P = 0.000). We couldn’t find any significant differences between groups in term of LDL and total cholesterol levels. Conclusion People following a VLCKD experience a more significant improvement in cardiovascular risk factors when compared to individuals on control diets.
Background Over the last decade, the results of several studies have indicated that adults' food preferences, consumption, and dietary choices vary depending on their genotype characteristics. However, the results of studies related to genes and polymorphisms involved in this phenomenon are contradictory. This study is a systematic review designed to evaluate the genetic determinants of food preferences. Methods This study was conducted following the guidelines of the Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA). Searches were conducted to identify articles testing the impact of genotypes on food choices, preferences, and intake in healthy adults. The search included all relevant keywords, and studies published between 1/1/1994 and October 2022 were considered. We assessed the quality of included studies and evaluated the risk of bias using the Newcastle–Ottawa Scale (NOS) for observational studies. Results A total of 8,510 records were identified through our search method, and finally, 50 studies were included in this study. The majority of the studies evaluated the association of genetic variants with preferences for macronutrients, sweet, bitter, and fatty foods. The results of our study suggest a significant correlation between TAS2R38 variants (rs713598, rs1726866, rs10246939) and bitter and sweet taste preferences. Additionally, we found a considerable association between the T102C polymorphism of the 5-HT2A receptor gene and a higher intake of protein, and rs1761667 (CD36) was associated with fat preference. Conclusion In conclusion, this study revealed a significant association between certain genetic variants and food preferences among adults.
The purpose of this study was to assess the connection between FTO rs9939609 (A/T) polymorphism and food preference. The study included 77 participants, 36 of whom were obese and had a low-calorie intake, and 41 non-obese participants with a high-calorie intake. Using a food frequency questionnaire (FFQ), the researchers calculated sweet and fatty food propensity scores. Genomic DNA was extracted from a peripheral blood sample from all participants, and FTO rs9939609 (A/T) polymorphism was assessed using standard methods. The study found no significant differences between the two groups in terms of sweet food preference (15.64 ± 10.53 in obese groups vs. 14.72 ± 7.95 in the non-obese group, p = 0.711) and fatty food preference (16.81 ± 8.84 vs. 17.27 ± 8.75; p = 0.833). Additionally, the study did not find any significant correlation between FTO rs9939609 (A/T) polymorphism and sweet and fatty food preferences in the fully adjusted models (p > 0.05). Therefore, the results of this study do not support the hypothesis of different food preferences.
In recent years, the food security and dietary quality of many Iranian families have deteriorated due to unprecedented inflation. Nutrition education programs can be an effective and inexpensive method to improve food quality and security. The present study aimed to investigate the effect of a comprehensive nutrition education program for low-income women who are heads of households and are covered by the Zanjan province’s welfare. The food security of 2600 female-headed households covered by the Welfare of Zanjan province was evaluated using a standard 6-item questionnaire. A total of 600 women with the highest food insecurity scores were selected for the comprehensive nutrition education program. The participants received six sessions of 1.5 h of courses about how to improve the quality of their diets and manage their budgets and be physically active. At the beginning of the study and one month after the completion of the intervention, the participants were asked to complete a questionnaire designed and validated by the investigators. The scores of each section before and after the intervention were compared using paired t-test method and p values of < 0.05 were considered statistically significant. There is no valid instrument to assess n-3 polyunsaturated fatty acids (n-3 PUFAs) intake in Iran. This study aims to develop a food frequency questionnaire (FFQ) that estimates the intake of n-3 PUFA and validate it in a healthy Iranian population based on the n-3 PUFA content of red blood cells (RBCs) and a 3-day food record (FR). A healthy population (n = 221) was recruited between February and July 2021. Participants completed the new FFQ and 3-day FR to evaluate the average intake of n-3 PUFAs. We used gas chromatography to assess the n-3 PUFA content of RBCs. To validate the FFQ based on FR and biomarker as references, the correlation coefficient was calculated. According to the Bland–Altman plots, a good agreement was found between the new FFQ and FR. Moreover, absolute intake values of ALA, EPA, DPA, DHA, and total n-3 PUFAs based on FFQ were positively correlated to their respective RBC membrane levels (coefficients between 0.205 and 0.508, p < 0.005) and FR (coefficients between 0.771 and 0.827, p < 0.001). This new FFQ is a valid instrument that can be applied to estimate the n-3 PUFA status of healthy Iranian adults.
Having an accurate dietary assessment tool is a necessity for most nutritional studies. As a result, many validation studies have been carried out to assess the validity of commonly used dietary assessment tools. Since based on the energy balance equation, among individuals with a stable weight, Energy Intake (EI) is equal to Energy Expenditure (EE) and there are precise methods for measurement of EE (e.g. doubly labeled water method), numerous studies have used this technique for validating dietary assessment tools. If there was a discrepancy between measured EI and EE, the researchers have concluded that self-reported dietary assessment tools are not valid or participants misreport their dietary intakes. However, the calculation of EI with common dietary assessment tools such as food frequency questionnaires (FFQs), 24-hour dietary recalls, or weighed food records, is based on fixed factors that were introduced by Atwater and the accuracy of these factors are under question. Moreover, the amount of energy absorption, and utilization from a diet, depends on various factors and there are considerable interindividual differences in this regard, for example in gut microbiota composition. As a result, the EI which is calculated using dietary assessment tools is likely not representative of real metabolizable energy which is equal to EE in individuals with stable weight, thus validating dietary assessment tools with EE measurement methods may not be accurate. We aim to address this issue briefly and propose a feasible elucidation, albeit not a complete solution.
Effect of a Health-Related Education Program on Food-Related Behaviors of Vulnerable Women in Zanjan: A Pilot Randomized Clinical Trial
Flaxseed (Linum usitatissimum L.), one of the oldest cultivated crops, continues to be widely grown for oil, fiber, and food. This herb is used in the food culture of some countries with different purposes. Flaxseed is one of the richest plants in terms of some nutrients. Numerous studies have shown that in terms of omega-3 fatty acids, this herb is one of the richest sources in the diet. Also, the lignan content in flaxseed is significantly higher than that in other plants. Also, the lignan content in flaxseed is significantly higher than that in other plants. In this chapter, the structure and chemical properties of this plant have been investigated first, and then the effectiveness of flaxseed in some chronic diseases has been mentioned.
This study aimed to evaluate the association between the intake of total flavonoids and flavonoid subclasses and metabolic syndrome (MetS) risk and to assess the modulating effects of lifestyle factors on these associations. A total of 1915 participants from the Tehran Lipid and Glucose Study were followed-up during 2006-2008 and 2016-2018. Their dietary intake was assessed by a food frequency questionnaire at baseline and within three-year intervals afterward. Moreover, the modifying effect of weight gain on the association between total flavonoids and MetS was assessed by Cox regression analysis. Participants in the highest tertile of flavonoid, flavonol, and flavone had a significantly lower MetS risk as compared to those in the lowest tertile. Also, in participants with weight gain <7%, all flavonoid subclasses had a more pronounced risk-reducing effect. Overall, the total flavonoid, flavonol, and flavone reduced the risk of MetS; this association could be modified by weight gain.
Objective: This study aimed to evaluate the effects of decaffeinated green coffee extract (DGCE) supplementation on anthropometric indices, blood glucose, leptin, adiponectin, and neuropeptide Y (NPY) in breast cancer survivors with obesity. Method: A total of 44 breast cancer survivors with obesity aged between 18 and 70 years and with a mean body mass index (BMI) of 31.62 ± 4.97 kg m-2 participated in this double-blind randomized clinical trial. Eligible patients were randomized to the intervention (n = 22) and control (n = 22) groups. They received two 400 mg capsules of DGCE or two identical placebos daily for 12 weeks. Serum concentrations of leptin, adiponectin, NPY, fasting blood sugar, insulin, and homeostatic model assessment for insulin resistance (HOMA-IR) were measured at the baseline and after completion of the intervention. Also, weight, waist circumference, fat percentage, muscle percentage, and visceral fat were measured. Results: There were no significant differences in terms of changes of anthropometric indices and concentrations of leptin, adiponectin, NPY, and blood sugar between the two studied groups. Conclusion: Supplementation with DGCE in breast cancer survivors with obesity had no significant effect on anthropometric indices and blood glucose, leptin, adiponectin, and NPY levels.
Objective: Irisin, mostly known as an exercise-induced fat browning myokine, has been recently detected in several cancer cells, and its potential for being utilized as a biomarker for early diagnosis of some cancers, such as Gastric cancer (GC), is the subject of speculation. The present study aims to compare serum irisin levels in GC patients and healthy controls and assess the interrelation between irisin and oxidative stress markers. Methods: In this case-control study, 22 newly diagnosed GC patients and 29 healthy controls were recruited based on the inclusion criteria. Serum levels of irisin were quantified in duplicates by ELISA. Oxidative stress indices, including total antioxidant power in sera, thiol group, malondialdehyde, and superoxide dismutase concentrations, were also measured in both groups. An independent-sample t-test was used to compare the means between the two studied groups. Results: Serum levels of irisin were significantly higher in the GC group compared with those of their healthy counterparts (p =0.032). No significant differences were observed between the two groups in terms of the serum total antioxidant power or the oxidative stress marker, including MDA, thiol groups, and SOD concentration in sera. Furthermore, there was no significant association between irisin, FRAP, the Thiol group, and the SOD activity. Conclusion: According to the finding, the increased serum levels of irisin in GC patients can play a potential role in the early diagnosis of the GC patients; hence, this peptide can be employed as a new diagnostic indicator of GC.
The usage of active antimicrobial food packaging systems has become inevitable with the globalization of food trade, and in this regards antimicrobial nanocomposites have attracted universal attention. The present study aims to examine the antimicrobial effects of CuO-containing nanocomposite on two important spoilage bacteria, namely gram-positive Bacillus subtilis and gram-negative Enterobacter aerogenes, and comparison of its antibacterial effect with ZnO-containing nanocomposite. To synthesize the nanoparticles of CuO, sonochemical method has been employed. The nanoparticles have been characterized by X-ray diffraction. By melt mixing in a twin-screw extruder, nanocomposite film containing 2 wt% CuO nanoparticles was prepared. CuO-containing nanocomposites had reduced the growth of both bacteria. CuO-containing nanocomposite had a stronger antibacterial effect on both of the microorganisms in comparison with ZnO-containing nanocomposite, which could be ascribed to their small size. Due to the significant antibacterial effect of ZnO- and CuO-containing nanocomposites, they have the potential to be used in active food packaging.
Background & Objective: Diabetic retinopathy (DR) is a common microvascular complication of type 2 diabetes mellitus (T2DM) and the leading cause of vision loss in working-age adults.Vitamin A (retinol) has a role in the mechanism of vision process and retinol binding protein-4 (RBP4), is a carrier of vitamin A, and as an adipokine may be associated with increased risk for insulin resistance and DR.This case-control study was aimed to determine and analyze plasma RBP4-to-vitamin A ratio in relation with terms of DR severity. Materials & Methods:In the present analytical cross-sectional study, 51 T2DM patients, aged 48-73 years old, were enrolled from those attending to the Ophthalmology Center of Vali-e Asr Hospital, Zanjan, Iran.Patients were categorized as non-retinopathy diabetic patients (NRDP) without any eye problem, those with mild non-proliferative DR (mild NPDR) (n=12), those with severe non-proliferative diabetic retinopathy (severe NPDR) (n=12), and those with proliferative DR (PDR) (n=12); a control group (n=15) was also considered.Anthropometric parameters, BMI, and WHR were determined and blood sample were taken from each participant after overnight fasting (12-14h) to measure their biochemical parameters.Serum RBP4 and vitamin A levels were measured via ELISA and C18 reverse-phase HPLC methods, respectively.Results: Plasma RBP4 concentration was significantly higher in three different stages of DR than that of the control group suffering from diabetes (77.0±11.0,81.7±10.9 and 88.3±11.9 vs. 71.4±12.3,respectively; P=0.004).The ratio of plasma RBP4-toretinol in DR groups was found to be significantly higher than that in the control group suffering from diabetes (0.21±0.06, 0.27±0.12and 0.28±0.07 vs. 0.16±0.14,respectively; P=0.001). Conclusion:Higher plasma RBP4-to-vitamin A ratio was related to DR severity.Further experimental studies with larger scales are recommended.
BACKGROUND:Following the re-imposition of US sanctions against Iran in 2018, unprecedented inflation has occurred in Iran's food market that will undoubtedly affect the food security of the Iranian people. The present study aims to determine the effects of the sanctions on food prices and food security of Iranian households.METHODS:Interrupted time series (ITS) analysis was applied to assess the effects of sanctions on the average retail price of food products in Iran. Household food security was estimated by calculating the share of household food expenditure. Costs of following a healthy diet based on the food pyramid were estimated.RESULTS:The import dependency ratio of Iran's food market was about 25%. After sanctions due to the limitations in international financial exchanges a significant increase in the prices of all food groups occurred in 2018, the year after the re-imposition of sanctions. The highest inflation rate was observed in vegetable, meat, and fruit groups. The percentage of urban and rural households in Iran that were prone to food insecurity increased from 8.84% and 25.17% to 11.2% and 29.2%, respectively, from 2017 to 2019. The annual average cost of a healthy diet for a sample Iranian family of 3.3, based on the current prices, is 341 866 008 IRR (US$2849) which is 3.6 times greater than the average amount Iranian families spent on food last year (94 505 000 IRR or US$788).CONCLUSION:After the re-imposition of US sanctions against Iran, food insecurity as a result of economic vulnerability, has increased and due to the current status of food prices and incomes, following a healthy diet has become more difficult for most Iranians. This makes the Iranian population more prone to chronic diseases in the near future and if this trend persists, it places the country in danger of food crisis and political instability.
Background and aims: The aim of this study is to investigate the association between the identified patterns of fruits and vegetables and metabolic syndrome (MetS) incidence, and to investigate whether lifestyle factors and socioeconomic status modify the effect of the patterns on MetS risk. Methods and results: We prospectively studied 1915 participants of the Tehran Lipid and Glucose Study, who were aged 19-74 years and followed up for dietary assessment using a validated, semi-quantitative food frequency questionnaire. After adjustment for confounding factors, total vegetable intake was inversely related to the risk of MetS. Total fruit and total fruit and vegetable were not associated with MetS risk. We identified four major patterns of fruits and vegetables by factor analysis: "fresh fruit pattern", "vegetable pattern", "dried fruit and cruciferous vegetable pattern", and "potatoes and fruit juice pattern". "Vegetable pattern" was negatively associated with MetS risk, and "potatoes and fruit juice pattern" increased the risk of MetS. Among participants with weight gain <7% during follow-up, all four identified patterns reduced MetS risk. When stratified by smoking, "vegetable pattern" and "dried Fruit and cruciferous vegetable pattern" lowered MetS risk among non-smokers. Stratification based on education resulted in MetS risk reduction across tertiles of "fresh fruit pattern" and "vegetable pattern". First and second tertiles of "dried fruit and cruciferous vegetable pattern" lowered MetS risk among educated participants, compared to the reference. Conclusions: The reduction in MetS risk caused by fruits and vegetables intake depends on the modifying effect of lifestyle and socioeconomic factors. Introduction: Osteoporosis falls among the major general health issues, specifically in the elderly, and is a widespread disease these days. According to various studies, good nutrition plays a significant role in osteoporosis prevention and treatment. The aim of this study was to conduct an extensive literature review on the effects of different nutrients to understand how macronutrients, micronutrients, and non-nutritive substances affect bone health. Methodology: To find relevant studies, the main keyword "osteoporosis" was searched in combination with "zinc," "vitamin K," "phosphorus," "vitamin D," "calcium," "lipid," "protein," and "phytoestrogens" in PubMed (MEDLINE), Web of Science, SID, and Iran Medex databases. Findings: The most important element for bone health is calcium, which has a direct link to the bone mass density (BMD). In the case of calcium deficiency, high phosphorus content can damage bone tissue. The acceptable ratio of phosphorus to calcium is 0.5-1.5:1. Vitamin D is another important nutrient for bones; serum levels of vitamin D less than 20 ng/ml reduce bone density and increase the risk of fracture. High protein intake results in calcium excretion and loss of bone mass. In addition, calcium deficiency increases the risk of osteoporosis, specifically in the elderly. According to the literature, there is an inverse correlation between saturated fats and BMD. Vitamin K and magnesium deficiencies are correlated with BMD reduction and increased risk of osteoporosis. Copper and zinc are used as co-factors in the formation of collagen and elastin, and in mineralization of bone. As a result, deficiency of these elements may disrupt the process of incorporating minerals into the bone matrix. Conclusion: Good nutrition may play a significant role in osteoporosis prevention and treatment. Indeed, a healthy diet containing calcium (1,200 mg/day); vitamin D (600 IU); and certain amounts of protein, magnesium, and vitamin K can contribute greatly to bone health.
