Laboratory work is essential in most applied science and engineering specific coursers. The continuous advances in Information and Communication Technologies be able the use of online laboratories (OLs). Their use is increased due to the advantages they offer compared to conventional laboratories, as unfortunately verified during Covid-19 pandemic. OLs and Learning Management Systems (LMSs) are key technologies in the learning process field. Normally, the integration of OLs with LMSs is carried out using proprietary or ad-hoc solutions. Furthermore, there are standards that can be used for this integration, such as: LTI, IEEE P92741.1 (xAPI), SCORM and IEEE1876. This work elaborates a survey which has been provided to the experts of online laboratories for them to complete. Gathered information allowed authors to diagnose the level of knowledge and use of the main standards for creating and integrating OLs. In fact, the analysis of this information confirms that there is a lack of criteria for selecting one standard against the others and how use it in the online laboratory development. This work gives guidelines for selecting the most appropriate standard according to desired characteristics of the online laboratory under development.
This paper provides a zero defect manufacturing (ZDM) approach designed for the virgin olive oil (VOO) industry, with the objective of producing the best possible product using sustainable methods. A deep analysis of related work for ZDM and the current state-of-the-art technology in the VOO elaboration process is presented, along with the implications of the well-known trade-off between quality and extraction yield and the importance of having the right information on the state of the fruits and the main technological variables of the process. Currently available new technologies, such as smart devices with cloud connectivity, enable having the required amount of data and information in real-time, thus making the concept of ZDM possible. Together with the proposed ZDM approach and strategies, the basic requirements and the first steps towards the implementation of ZDM in this productive sector are identified.
Marking the tree canopies is an unavoidable step in any study working with high-resolution aerial images taken by a UAV in any fruit tree crop, such as olive trees, as the extraction of pixel features from these canopies is the first step to build the models whose predictions are compared with the ground truth obtained by measurements made with other types of sensors. Marking these canopies manually is an arduous and tedious process that is replaced by automatic methods that rarely work well for groves with a thick plant cover on the ground. This paper develops a standard method for the detection of olive tree canopies from high-resolution aerial images taken by a multispectral camera, regardless of the plant cover density between canopies. The method is based on the relative spatial information between canopies. The planting pattern used by the grower is computed and extrapolated using Delaunay triangulation in order to fuse this knowledge with that previously obtained from spectral information. It is shown that the minimisation of a certain function provides an optimal fit of the parameters that define the marking of the trees, yielding promising results of 77.5% recall and 70.9% precision.
The selection of optimal set points is an important problem in modern process control. Fuzzy cognitive maps (FCMs) allow to construct models of complex processes using expert knowledge, which is particularly useful in situations where measuring the variables of interest online is problematic. These models can be used as constraints in optimization problems with the objective of determining optimal set points for those processes. This article presents a reformulation of the constraints imposed by the FCM models that reduces the complexity of the resulting optimization problem and enables the application of heuristic methods for its solution. Computational results show that the use of separable programming on the reformulated problem constitutes a very good alternative, both in terms of solution time and reliability in finding the optimum, enabling the application of FCM modeling to larger systems and easing the practical implementation of the approach.

The olive oil sector is undergoing a technological transformation promoted by high international competitiveness. This transformation must be aligned with the concepts of industry 4.0 that are already well defined and implemented in other sectors. The integration of advanced sensorics in the process phase in which the quality of the manufactured product is inspected is key to responding in the shortest possible time to deviations in the desired quality. In this work, the results of the experimentation carried out with an e-tongue voltammetric sensor are presented to evaluate its potential in the detection of two of the organoleptic defects that appear more frequently in olive oil (musty and vinegary). This sensor has been built in the research group’s laboratory and is made up of three metals in the measurement probe (nickel, silver and copper). Three classification algorithms (Support Vector Machines, Naïve Bayes and Classification Trees) were used and musty-type defect was identified with a success rate of 72
The organoleptic profile of a Virgin Olive Oil is a key quality parameter that is currently obtained by human sensory panels. The development of an instrumental technique capable of providing information about this profile quickly and online is of great interest. This work employed a general purpose e-nose, in lab conditions, to predict the level of fruity aroma and the presence of defects in Virgin Olive Oils. The raw data provided by the e-nose were used to extract a set of features that fed a regressor to predict the level of fruity aroma and a classifier to detect the presence of defects. The results obtained were a mean validation error of 0.5 units for the prediction of fruity aroma using lasso regression; and 88% accuracy for the defect detection using logistic regression. Finally, the identification of two out of ten specific sensors of the e-nose that can provide successful results paves the way to the design of low-cost specific electronic noses for this application.
The highest quality of extra virgin olive oil must be guaranteed to succeed in the competitive market of the industry. To fulfil this need, high standards of fruit quality are required. In recent years, this search has led to the development of computer vision systems for the automatic inspection of fruits. Skin damage, dirtiness, and external colour were the main features selected. However, no known report is related to the internal quality evaluation of olives. The present research explores the application of multispectral images (from 600 to 975 nm) to discriminate olive fruits by their firmness. To achieve this aim, 58 olives were classified as hard or soft by an expert and then measured by a penetrometer. Afterwards, 58 multispectral images were obtained, and 8352 pixels were randomly selected for feature extraction. The feature vector of each pixel was composed of 25 infrared absorption values. These data were input into three supervised classification algorithms: a naïve Bayes (NB) classifier, a multilayer perceptron (MLP), and a support vector machine variation (SMO). The highest performance was achieved by the MLP, with an accuracy of 95% for the firmness grading. Furthermore, the three algorithms were subjected to principal component analysis (PCA), by which the MLP was confirmed to be the best model and its results were improved. Moreover, according to the second principal component, the 675 nm and 855 nm band frequencies have the strongest weights. The overall results confirm the convenience of multispectral imaging in olive firmness inspection, with the advantage of being a non-invasive technology.

Agroalimentary laboratories typically process samples that require different types of analysis depending on the substance being analyzed and the requirements of the clients. A key parameter for client satisfaction is the time that it takes since the samples arrive at the laboratory facilities and the results are provided to the client. Thus, the order in which the different samples are processed and the analysis are performed can have a significant impact in the overall customer satisfaction. This paper proposes a novel approach for planning the production of agroalimentary laboratories based on maximizing a measure of customer satisfaction derived from this lag between sample reception and analysis finalization. This way, a planning model is defined which, based on the basic version of the Resource-Constrained Project Scheduling Problem, can be used to optimize an objective function that focuses on the client satisfaction, considering the relative relevance of clients and samples. The paper includes a detailed presentation of the parameters, variables and constraints required to define the problem, along with the corresponding modeling assumptions. The applicability of the approach is presented with a discussion of the solutions provided by the optimization problem for a set of scenarios of interest, which show the suitability of the method as a systematic tool for planning the operations of agroalimentary laboratories.
The ripeness and sanitary state of olive fruits are key factors in the final quality of the virgin olive oil (VOO) obtained. Since even a small number of damaged fruits may significantly impact the final quality of the produced VOO, the olive inspection in the oil mill reception area or in the first stages of the productive process is of great interest. This paper proposes and validates an automatic defect detection system that utilizes infrared images, acquired under regular operating conditions of an olive oil mill, for the detection of defects on individual fruits. First, the image processing algorithm extracts the fruits based on the iterative application of the active contour technique assisted with mathematical morphology operations. Second, the defect detection is performed on the segmented olives using a decision tree based on region descriptors. The final assessment of the algorithm suggests that it works effectively with a high detection rate, which makes it suitable for the VOO industry.
