This study was intended to determine the effect of adding flax seeds to a concentrate for lamb fattening on the fatty acid composition of the omental fat depot in Pramenka lambs reared indoors. A total of 63 lambs (10±3 kg of live body weight, 30±7 days of age, 30 males and 33 females) were used. They were divided into two groups: a control (CON) fed on hay, ewe's milk, and a 300-g daily ration of a commercial concentrate, and an experimental group (FS) fed on hay, ewe's milk and 300 g/day of the concentrate enriched with 5% of flax seeds. After a 60-day fattening period for each group, 10 lambs (5 males and 5 females) were selected and omental fat samples were analysed for fatty acid composition. Highly significant differences (p⟨0.001) were found between CON and FS in α-linolenic acid, the sum of n-3 fatty acids, and the ratio n-6/n-3 fatty acids. The effect of sex on the fatty acid content in the fat depot was only significant for C20:0 fatty acid (p⟨0.05).
Oxidation is one of the major reasons for impaired quality of meat and meat products but can be prevented by the addition of antioxidants. In the present study, the effect of dietary sweet chestnut wood extract and hop cones on the quality and oxidative stability of meat and dry-cured products was investigated. Control pigs (N = 11) were fed a commercial diet (13.1 MJ metabolizable energy, 15.5% crude protein), while the other two experimental groups were supplemented with 3% of sweet chestnut wood extract (Tannin; N = 12) or 0.4% of hop cones (Hops; N = 11). The quality of meat and dry-cured products was evaluated by means of chemical composition, water holding capacity, objective color, and lipid and protein oxidation. No major effects of sweet chestnut wood extract or of hops supplementation were observed, nevertheless, some indications of improved water holding capacity could be attributed to antioxidants supplementation. The color evolution of dry-cured bellies from Tannin and Hops groups of pigs during refrigerated storage was also indicative of an improved oxidative stability.
This four-year study reports the occurrence of ergot alkaloids (EAs) in cereals intended for animal feeding collected in Slovenia. A total of 517 samples of cereals were analysed using liquid chromatography-tandem mass spectrometry for the presence of EAs. The sample set included wheat, rye, triticale, oat, spelt and barley. The study revealed that 17% of the analysed cereal samples were contaminated with at least one ergot alkaloid. EAs have two epimeric forms: -ine and -inine. The incidence rates of the -ine and -inine forms in the analysed samples were 16% and 15%, respectively. The highest contamination rates were observed in rye (54%), oat (50%) and spelt (30%), where the highest mean concentrations of total EAs were also determined (502 µg/kg, 594 µg/kg and 715 µg/kg, respectively). However, the highest concentrations of total EAs were found in wheat and rye (4217 µg/kg and 4114 µg/kg, respectively). The predominant EAs were ergometrine, ergosine and ergocristinine. The occurrence of six or more ergot alkaloids was observed in 49% of the positive samples. A weak correlation (p = 0.284) in the positive samples was found between the mass of sclerotia and the total concentrations of EAs using the Spearman correlation coefficient.
Effect of reduced salting and pig sex on the quality of Slovenian dry-cured ham Kraški pršut was studied. A total of 48 hams from 24 crossbred pigs (12 gilts, 12 castrates) were submitted to two different salting regimes; standard salting for 18 days (HS hams, n = 24) and shortened salting (LS hams, n = 24) for 10 days. Reduced salting time effectively reduced salt content but resulted also in higher extent of proteolysis of LS hams which was associated with differences in texture and colour of biceps femoris muscle. Lower fat oxidative stability was observed in HS hams. With regard to sex effect, the hams originating from gilts were more proteolysed which was associated with differences in texture and colour. Lipid oxidation was similar in gilts and castrates.
Here we present the first welfare assessment of commercial layers conducted in Slovenia. Hens were assessed in four systems at the beginning of the laying period at 22 to 24 weeks and at 50 to 55 weeks of age. These systems were an enriched battery cage system, an aviary, and a litter system with or without outdoor access. Clinical inspections of flocks were performed, and animal-based welfare indicators were scored (e.g., keel bone damage, feather condition, foot pad lesions, beak deformities, and comb and skin wounds). Hens’ fear level was scored using the novel object test and avoidance distance test. Among resource-based measures, selected micro-climate parameters were measured.The results showed no obvious clinical signs related to infectious diseases and suggest that the selected climate conditions were satisfying in all systems. Among animal-based welfare indicators, keel bone damage was shown to be the most serious problem connected with hens’ age and housing systems (p < 0.05). Enriched cages and aviary system were associated with significantly more keel deformities compared to the litter systems (p < 0.05). In addition, the least prevalence of foot pad dermatitis together with better feather condition was observed in the litter systems. In the family-owned aviary facility, hens were found to be the most motivated to approach a novel object or a human, and as such were recognized as the least fearful birds, with better human–animal interaction compared to other intensive housing systems.Key words: laying hens; welfare; health; housing systemOCENA DOBROBITI V INTENZIVNIH REJAH KOKOŠI NESNIC V SLOVENIJIPovzetek: Opravili smo prvo celovito oceno dobrobiti kokoši nesnic v Sloveniji. V raziskavo smo vključili nesnice iz štirih različnih sistemov reje in raven dobrobiti ocenili v dveh starostnih obdobjih; na začetku nesnosti, v starosti od 22 do 24 tednov in pri 50 do 55 tednih. Nesnice so bile rejene v obogatenih kletkah, v voljerah, v talni reji brez možnosti izpusta in v talni reji z možnostjo izpusta. Ob vsakem ocenjevanju smo jate klinično pregledali in s pregledom posameznih živali ocenili specifične indikatorje dobrega počutja (poškodbe prsnice, operjenost, poškodbe podplatnih blazinic, deformacije kljuna in poškodbe grebena ter kože). Plašnost kot indikator socialnega obnašanja smo ocenili s testom novega predmeta in s testom odmika od človeka. Spremljali smo tudi mikro-klimatske pogoje reje.Ves čas spremljanja nismo ugotovili vidnih kliničnih znakov kužnih obolenj. Rezultati meritev mikro-klimatskih parametrov nakazujejo, da so bili pogoji v rejah dobri. Poškodba prsnice se je izmed specifičnih kazalnikov izkazala za najresnejši problem, na katerega vplivata tako starost kot sistem reje (p < 0,05). Poškodbe prsnice so bile značilno bolj izražene pri kokoših iz obogatenih kletk in voljer (p < 0,05) v primerjavi z nesnicami iz talnih rej. Kokoši iz talnih sistemov so bile tudi boljše operjene in so imele nižjo prevalenco poškodb na podplatnih blazinicah. Nesnice, ki so bile rejene v voljerah na družinski kmetiji, so kazale največ zanimanja za nove predmete in človeka. Te kokoši so bile ocenjene kot najmanj plašne in so izražale boljšo interakcijo človek–žival kot kokoši iz drugih primerjanih sistemov.Ključne besede: kokoši nesnice; dobrobit; zdravje; sistem reje
Summary Th e eff ect of linseed supplementation on carcass, meat quality and fatty acid profi le of fat tissue was studied. No diff erences in carcass and meat quality traits were observed, the exception being drip loss that was lower in pigs supplemented with linseed. As regards fatty acids, linseed supplementation led to the increased content of unsaturated, polyunsaturated and n-3 fatty acids and decreased content of saturated fatty acids and n-6/n-3 ratio in the subcutaneous and intramuscular fat of pigs.
The objective of this study was to evaluate effects of two commercially available probiotic additives, containing Bacillus spores, on carcass and meat characteristics, serum lipids and concentration of cecal volatile fatty acids of meat type chickens. Birds were fed regular corn-soy meal based feed (control), supplemented with additive A, containing 1.6 × 10(6) spores per gram of feed of Bacillus subtilis and Bacillus licheniformis (group A) or additive B, containing the same concentration of Bacillus cereus var. toyoi spores (group B). One hundred and twenty birds (20 per replicate) were slaughtered at the age of 55 days. Results showed that birds in group B had higher (p < 0.05) final body weight compared to birds from group A and higher carcass weights and yield percentages compared with control. Breasts and whole legs were also heavier in group B, compared to control, but not the yield. Group A had higher yield of wings and lower abdominal fat weight compared to group B (p< 0.05), but not compared with control. Total cholesterol was not affected by the dietary treatment, on contrary both probiotics elevated the LDL (p < 0.05) and lowered HDL cholesterol, thus unfavourably changed animal's blood serum cholesterol profile. Both probiotics influenced the cecal fermentation, which was observed as decrease in cecal concentrations of propionic, butyric, n-butyric and n-valeric acids, but the differences compared to control group were statistically significant for group A only. It was established that probiotic additive B was more effective regarding carcass and meat part weights than additive A, however the animals from group B also had more abdominal fat and their meat had significantly higher conductivity than control group, which is not considered as beneficial.
