Twenty-seven-month-old brown trout from two genotypes, i.e., control and lines selected for growth, were reared in seawater cages and fed two diets containing 16% and 26% fat (LFR and HFR) during the last 4 months of growth to maximise heterogeneity at slaughtering at 3.8 kg (n=48). Image segmentation methods were developed and applied to quantify quality traits on cutlets by color image analysis including flesh color (L*a*b), myoseptes (visible fat), myomera, and peripheral surfaces. Results were also compared to lipids evaluated by Soxhlet or by NMR. Color image analysis provided results on the effects of feeding and selection on the development of various tissues representing edible flesh.
We present in this paper the color segmentation methods that were used to detect. appearance defects on 3 dimensional shape of fresh ham. The use of color histograms turned out to be an efficient solution to characterize the healthy skin, but a special care must be taken to choose the color components because of the 3 dimensional shape of ham.
The Trade Union of turkey in France (CIDEF) and National Institute of Agronomical Research (Research Meat station of INRA) study the turkey breast meat color to predict meat transformation yield and the consumers' acceptability of fresh fillets. They have asked to Cemagref to develop a new tool based on color numerical vision to determine the relevant objective color measurements which could give prediction of the breast transformation yield to minimize economic loss of the production of turkey ham. In this research project we devised a vision system to research and measure turkey breast meat visual features. A color vision system was developed and calibrated to grab color images and segmentation methods were applied to locate tissues of breast and to measure their color. To find efficient aspect variables, the color results were studied, in relation to breast transformation yield and other measurements included meat pH.
La vision industrielle est de plus en plus utilisée en contrôle qualité des produits agro-alimentaires car elle permet un tri des produits rapide, répétable, objectif et surtout une évaluation non-destructive de leur aspect. Dans ce cadre, ont été développés au Cemagref plusieurs projets de recherche sur l'évaluation de la qualité de produits agro-alimentaires d'origine animale, en particulier un projet sur l'évaluation de la qualité des carcasses de dindes sur chaîne d'abattage. Dans cette application, une analyse préalable des problèmes devant être résolus par vision numérique a débouché sur un cahier des charges du système à développer sur chaîne industrielle, un poste d'acquisition d'image a été conçu, des traitements d'images couleur ont été développés pour détecter et identifier des défauts sur des carcasses de dindes. Ces traitements sont basés sur une méthode de segmentation d'image qui exploite l'histogramme multidimensionnel des images couleur. Les traitements et les mesures effectuées sur les images ont été validés sur des lots industriels pour évaluer la pertinence du système dans un cadre industriel. Cet exemple montre l'apport de l'utilisation de la vision numérique couleur dans un cas d'objets complexes avec des défauts très peu nuancés en couleur et dans des conditions industrielles hostiles et de cadence importante.
