【Objective】In order to systematically get the slaughter experiment standard.【Method】The slaughter experiments were carried on six 6-month weaned Xia'Nan cattle bulls,six 12-month store cattle,ten 18-month fatten bull.【Result】The results showed that the slaughter rate,net meat percentage,loin eye area,meat bone rate,the ratio of high quality cut meat and high quality beef rate for 6-month weaners were 60.19%,48.04%,58.47 cm2,4.34∶1,39.84% and 17.40%.For 12-month cattle,they were 60.38%,49.71%,83.45 cm2,5.18∶1,36.03% and 18.94%,and for the 18-month cattle were 62.58%,52.36%,102.39 cm2,5.60∶1,35.14% and 17.62%,respectively.Based on the quality measurement of striploin and knuckle of six 18-month fatten bulls,the protein content was 23.28% and 22.71%.Fat content was 2.61% and 2.25%.Steam boiling loss was 30.96% and 31.74%.And the muscle shear force was 3.95 kg/cm2 and 4.32 kg/cm2,respectively.【Conclusion】The prematureness of Xia'Nan cattle was good to use the production of baby beef.18 months old age could up to shipper beef quality standard,so it could also used to product top grade beef.
【Objective】To get the optimum daily amount of concentrate feed in Xianan cattle fattening days.【Method】Under the same raising management condition,80 Xianam cattle,weighing 300 kg or so,were fed with four different concentrated feed,then we made a compared research to the fattening benefit when these cattle achieved the same weight.【Result】The results showed that fattening benefit increasesd with the increasing of amount of concentrated feed,but not the more the better.【Conclusion】Proper concentrat feed level was critical to improve the fattening result.

The weight of XiaNan Bovine in different generations and ages were compared with Nanyang Cattle and stabilized crossbreeding cattle which contain 50% and 25% Charolais blood respectively in this research.The result showed that the weight of bulls at the age of 0,6,12 and 18 months were higher than Nanyang cattle(P<0.01),while the weight of cows at the age of 0,6,12,18,24 and 30 months were higher than Nanyang cattle(P<0.01),compared with stabilized crossbreeding cattle,the cows at the age of 0 and 6 months had not significant effects on body weight(P>0.05).
