My research interests lie in the area of food science and technology, ranging from food components to evaluation of emerging technologies in food processing. Over the last ten years, I have studied the impact of high intensity ultrasound on fresh and processed meat from several animal species. Presently, I am working on ultrasound as a tool to increase the functional properties of meat and dairy products.
