为了优化餐用油橄榄果的脱涩工艺,以单宁消减率和感官评分为指标,采用3因素3水平的响应面分析法,分析了脱涩时间、碱液质量分数和脱涩温度对脱涩效果的影响,结合感官评价,确定了完整餐用油橄榄果和去核餐用油橄榄果的最优脱涩工艺参数.结果表明:完整餐用油橄榄果的最佳工艺参数为脱涩时间9.54 h,碱液质量分数2.85%,脱涩温度27.21℃,在此条件下完整餐用油橄榄果的脱涩率达到75.4%,感官评分为79,综合评分理论值为77.9.去核餐用油橄榄果的最佳工艺参数为脱涩时间7.48 h、碱液质量分数1.83%、脱涩温度28.48℃,此条件下餐用油橄榄果脱涩率为88.29%,感官评分为88.03,综合评分理论值为88.0.

In order to straighten up development achievement of introduced olive in China for fifty years, status pro of olive industry in China was elaborated, from the aspects of production base scale, yield and output, processing capability, germplasm resources, science and technology support, cooperation and exchange, and so on. In addition, some countermeasures for develop Chinese olive industry were provided, from the respects of policy support, scientific layout, stock breeding, production base construction, standard carrying-out, technology support, external cooperation, and talent training.
Olive has been introduced to Longnan of Gansu for 36 years,now,cultivation area and fruit yield are both the largest share in China.In order to further study oil content and fruit quality of different olive cultivars,to study residual oil rate of different processing equipments,and to provide reference for selecting business processing equipment,the oil contents in fresh fruit of major olive cultivars were determined and analyzed in Longnan of Gansu,using the methods of field investigation and inner analysis.The results show that the order of the cultivars based on oil content from high to low is Ascolana Tenera,Frantoio,EZ-8,Koroneiki,Leccino,Coratina,CG-32,and the oil contents of all varieties at later picking time are more 7%-8% than those before one month,except CG-32.In the end,several proposals about olive high-yield cultivation were put forward.
