试验以羊乳为原料,以枸杞、灵芝孢子粉为主要辅料,并添加了一种新型功能性多肽(沛力肽),制备稳定性良好的具有益寿健体作用的花色羊乳产品.运用超微粉碎、超声波辅助萃取等技术分别处理灵芝孢子粉、枸杞等辅料;采用正交试验方法并以感官评价和产品稳定性为综合指标确定花色羊乳的最佳配方.(1)枸杞超声波辅助萃取工艺参数:超声波功率140W、时间25 min、料液比1:15(g/mL)、温度55℃;(2)灵芝孢子粉最佳粒度:经一级粉碎的中等粒度;(3)最优配方:灵芝孢子超微粉0.1%、谷物饮料稳定剂0.22%、沛力肽0.15%、羊乳/枸杞汁体积比为82:18,制得的产品风味佳、稳定性良好.
Objective: To establish a valid method to discriminate waste cooking oil. Methods: This study used refractive index, cholesterol, fatty acid composition, Na+ content as indicator components to establish an integrated evaluation system for discriminant analysis of waste. Results: When oil samples had refractive index lower than 1.4750, cholesterol content more than 0.1 mg/g, fatty acid U/R value significantly lower than edible oil or with characteristic fatty acids, and Na+ content more than 3 mg/kg, they could be considered as not safe with respect to one or combinations of these parameters. At least five characteristic fatty acids for waste cooking oil were identified by GC-MS analysis. Conclusion: The accuracy of the method was 100% by using these four parameters and hence could discriminate waste cooking oil from edible vegetable oil.
In this study,Lactobacillus acidophilus and Bifidobacterium were compared for proliferation and acid-producing properties in fresh goat’s milk as well as proteolytic activity and survival rate during cold storage of fermented goat’s milk.The results showed that during the fermentation period,compared with Bifidobacterium,Lactobacillus acidophilus revealed better acid-producing characteristics and proteolytic activity(P 0.05),and consistent change trend in proliferation.During the subsequent cold storage,the difference in acid-producing capacity between both probiotic strains became less or even disappeared until the 11th day.The proteolytic activity of Lactobacillus acidophilus was significantly higher than that of Bifidobacterium(P 0.05).The high-level activities of Bifidobacterium and Lactobacillus acidophilus were preserved with no significance during 21 days of storage(P 0.05).Between the storage days 21 and 26,the activities exhibited a distinct decrease of approximately 80.8% and 88.4% in survival rate(P 0.05).In a word,both probiotics have similar proliferation and fermentation performance in goat’s milk.However,Lactobacillus acidophilus is better than Bifidobacterium in acidproducing characteristics,survival rate and proteolytic activity.

Drainage oils are a general designation of all kinds of inferior edible or inedible oils in daily life,long-term eating of them will cause serious harmful to human body.According to the physicochemical properties of drainage oils and compare the advantages and disadvantages of different inspection methods,this paper introduces the existing inspection technologies principle and their research progress,based on the current comprehensive comparison of inspection methods,find that these methods can't accurate determining the sources and types of drainage oils.We need to combine with the features related inspection technologies to exploring the special marks of drainage oils so that may realize accurate evaluation and instant inspection.All of these expect to provide concrete references for founding new methods of testing drainage oils and clarifying the thought of setting up a new evaluation system of drainage oil.
