浆果的营养物质和功能性成分丰富,但由于其水分含量较高,采后易腐败变质,极大地缩短了浆果的货架期,因此延长采后浆果的保鲜时间尤为重要.概述了多糖类涂膜、蛋白类涂膜、多糖-蛋白复合涂膜这3类天然可食性涂膜的优缺点以及在采后浆果保鲜中的应用,并对其保鲜效果进行了分析,以期为采后浆果保鲜技术的应用和发展提供技术借鉴.
农产品质量安全话题一直是全社会关注的热点,相关科普宣传与活动逐渐走进大众视野,但科普工作还处于初级阶段,尚未形成规范化、系统性的机制,本文从建立机制、加强监管、规范内容、创新形式、队伍建设等方面,对农产品质量安全科普工作提出建议,以期促进农产品质量安全科普工作创新发展.
目的 建立燕麦及其制品中柄曲霉素(sterigmatocystin,STC)检测方法,并了解我国部分地区燕麦及其制品中STC的污染情况.方法 在内蒙古农户家中采集新产燕麦136份,同时采集内蒙古超市中散装燕麦粉5份以及我国大陆地区市售燕麦片96份.采用QuEChERS(quick,easy,cheap,effective,rugged,safe)前处理结合高效液相色谱串联质谱(high performance liquid chromatography-mass spectrometry,HPLC-MS/MS)方法检测STC的含量.结果 在燕麦和燕麦片中分别添加低、中、高浓度的STC,其平均回收率范围为83.6%~119.4%,RSD为2.3%~15.4%,方法定量限为0.5μg/kg,在燕麦和燕麦片中的检出限分别为0.02μg/kg和0.05μg/kg,表明该方法可用于燕麦和燕麦片中STC含量的检测.分析检测结果可知燕麦、燕麦粉和燕麦片3种样品中均检出较低浓度的STC,检出率分别为0.7%、60%和13.5%,平均含量分别为0.1、0.2和0.11μg/kg.结论 内蒙古地区燕麦、燕麦粉和我国大陆地区市售燕麦片中柄曲霉素污染水平整体较低,但在监管中仍不容忽视,该研究同时也为以后开展居民膳食中STC风险评估提供基础数据.

In China, aflatoxin B-1 (AFB(1)) and sterigmatocystin (STC) have been detected in rice but there is no published information on the mycobiota in toxin-contaminated rice samples. Occurrence of AFB, and STC was evaluated in 100 rice samples. Out of 78 samples of polished rice, 12 and 23 samples had detectable levels of AFB(1) and STC, respectively, at mean levels of 0.14 mu g/kg and 0.39 mu g/kg, respectively. The highest level of STC in polished rice was 2.76 mu g/kg in a sample from Hubei province; out of 22 samples of unhusked rice, STC was detected in 12 samples at a mean level of 0.91 mu g/kg; however, only one sample contained detectable amounts of AFB, at a level of 0.2 mu g/kg. Seven samples that were positive for both AFB1 and STC were selected and evaluated for the presence of mycobiota; species of Aspergillus and Penicillium predominated. Twelve species of Penicillium and fifteen species of Aspergillus were isolated, of which P. fellutanum and A. candidus were the most frequently found. Further studies are now required to determine which of these species produce AFB(1) and STC.
Wheat is an important cereal but it is often contaminated with mycotoxins. The natural occurrence of aflatoxin B1 (AFB1) and sterigmatocystin (STC) was determined in 178 food samples (32 wheat samples and 146 wheat products) purchased from Chinese supermarkets. The methodology was validated, the wheat and wheat products samples were treated with a modified QuEChERS (quick, easy, cheap, effective, rugged, and safe) and quantified by liquid chromatography-tandem mass spectrometry (LC-MS/MS). From these samples 18.8% of wheat and 8.2% of cracker samples were contaminated with AFB1. Mean levels were 0.06 µg/kg and 0.05µg/kg, respectively. There was no AFB1 contamination in white bread or whole meal bread. Meanwhile 53.1% of wheat, 59.2% of crackers, 20.8% of white bread and 16% of whole meal bread samples were contaminated with STC. The mean levels were 0.07, 0.79, 0.12 and 0.12 µg/kg respectively. Although the levels were low, this demonstrates the need for more comprehensive surveys for these two mycotoxins in wheat and wheat products from China.
