High CO2 levels (above 15%) have long been known to inhibit the growth of fungi. MAP have been shown to have promise for the control of Botrytis in table grapes, to replace the use of SO2 pads, nevertheless, the stem is seriously affected by browning.The SO2 is still the best method to control decay (Botrytis and Penicillium). Also helps to delay stem and rachis browning, since it is an antioxidant. The MAP will not be able to compete with this soon.Also, most of the industry does not have the policy of precooling the harvest trays, and do not have the fast systems to decrease the field heat right after harvest, nor acclimatized packings. So far, only a few companies in Peru can do so. Therefore, the use of MAP is almost impossible to use since cooling down the fruit after packaging would be too much time consuming, and the high dehydration and condensation would be too much to handle it.
En los frutos mínimamente procesados en fresco (MPF) el tipo de corte y la temperatura son factores por considerar para mantener una calidad y apariencia adecuada. El objetivo de este trabajo fue evaluar los efectos del corte y la temperatura de conservación sobre la actividad metabólica, color, firmeza, perfil aromático y concentración de ácidos orgánicos y azúcares de peras (Pyrus communis L. cv. Packham’s Triumph). Los frutos enteros fueron lavados, pelados, cortados en cascos o cubos, envasados en tarrinas y posteriormente almacenados 8 d a 5 o 8 ºC. El tipo de corte y la temperatura tuvieron un efecto significativo sobre los parámetros fisiológicos, color, firmeza y en el contenido de ácidos orgánicos y azúcares. Sin embargo, el contenido de compuestos aromáticos volátiles se redujo independientemente del tipo de corte y las temperaturas de conservación. Por tanto, esta variedad de peras Packham’s Triumph deben ser procesadas en cascos y deben almacenarse a 5º C para mantener una calidad general óptima durante 8 días.
The effect of calcium propionate (PCa) 1% p/v, ethylenediaminetetraacetic acid (EDTA) 0.1% p/v, cysteine (CIS) 0.5% p/v and citric acid (AC) 0.5% p/v were evaluated on the total phenol content, antioxidant capability and respiration rate of 'Packham's Triumph' pear wedges, packed in modified atmosphere (MA, 8-11% O-2 and 14-16% CO2 after 6 days of storage) and stored at 5 degrees C for 8 days. The treatments were control (washed with water at 5 degrees C, MA), PCa + EDTA + CIS + AC (MA), and PCa + EDTA + CIS (MA). The evaluations were performed on days 1, 3 and 8 after processing. The respiration rate of the control samples was 42% lower than the pear wedges treated with PCa and anti-browning agents (10-12 mg CO2 kg(-1) h(-1)) during 8 days of storage. On days 3 and 8, the pear wedges treated with PCa + EDTA + CIS + AC and PCa + EDTA + CIS showed respiration rates 55% higher than the control samples. On the other hand, the total phenol content was preserved along the storage period, even though it was 27% lower than the content in peeled fresh fruit (265 mg 100 g(fw)(-1)). At the end of the storage period, the PCa + EDTA + CIS showed the highest phenolic content (214 mg 100 g(fw)(-1)), while it was lower in the other treatments (146 mg 100 g(fw)(-1)). According to the antioxidant capability, non-significantly statistical differences were shown throughout shelf-life, except those wedges treated with PCa + EDTA + CIS whose antioxidant capability was increased by 67%. After the minimally processing operations chemical agent immersions and MA packaging, the total phenol content was diminished compared to the initial fresh flesh fruit. In addition, MA could have a high impact on gas atmosphere inside the packages and preservation of the functional quality of 'Packham's Triumph' pear wedges because no differences were detected among treatments.

RESUMEN La calidad postcosecha y la susceptibilidad a los danos por frio fueron estudiados en duraznos chilenos ‘NOS 21’. Los duraznos fueron almacenados en el Centro de Estudios Postcosecha de la Universidad de Chile a 0oC por 17, 30, 45 y 66 dias, y evaluados a la cosecha, en cada salida de frio y despues de 2 a 6 dias a 20oC (periodo de maduracion). ‘NOS 21’ presento frutos con 188g de peso, 72mm de diametro, 63% de coloracion rojiza de cubrimiento, pulpa con coloracion blanca de sabor dulce con 13,8 oBrix y 0,72% de acido malico. La perdida de masa fresca fue pequena a salida de frio. La maduracion comenzo por la zona del hombro del fruto, region con la menor firmeza en frutos de este cultivar. La firmeza ecuatorial se mantuvo en 50N durante el almacenamiento, bajando significativamente de 12 a 33N en los dias de maduracion siguientes al almacenaje. El contenido de jugo extraido promedio fue de 54% en el almacenaje y de 45% en la maduracion, disminuyendo en la maduracion pasados los 45 dias a 0oC cuando los danos por frio se manifestaron mas intensamente. Se observo harinosidad en la maduracion despues de los 30, 45 y 67 dias en frio. A los 45 dias a 0oC mas 6 dias a 20oC, el dano fue severo, abarcando a la totalidad de los duraznos. En esta misma evaluacion los duraznos tambien presentaron coloracion rojiza y pardeamiento en la pulpa. La coloracion rojiza afecto al 17% de la pulpa siendo el dano leve, mientras que el pardeamiento fue severo afectando un 54% de la pulpa. El pardeamiento, no obstante, fue mas severo en la maduracion pasados los 66 dias a 0oC afectando a todos los frutos y afectando un 88% de la pulpa. Debido a los danos por frio, 30 dias es el tiempo maximo recomendado de almacenamiento refrigerado para duraznos ‘NOS 21’.
El efecto del acondicionado a 20 ºC por 6 días previo al almacenaje refrigerado sobre la calidad y el desarrollo de daños por frío fue estudiado en ciruelas 'Constanza'. Terminado el tratamiento las ciruelas fueron almacenadas a 0 ºC por 7, 14, 21, 28, 35 y 42 días, o a 5 ºC por 7, 14 y 21 días, con evaluaciones a la cosecha, en cada salida de frío y después de madurar a 20 ºC. Como control las frutas fueron almacenadas a 0 y 5 ºC, sin acondicionar. Las pérdidas de masa fresca fueron bajas durante el almacenaje a 0 o 5 ºC y aumentaron en la maduración. La firmeza cambió poco en las ciruelas-control a 0 ºC, mientras que en las acondicionadas disminuyó hasta los 28 días a 0 ºC. El acondicionado combinado con el almacenaje a 5 ºC causó una gran pérdida de firmeza, con un 50% de frutos presentando firmeza baja para comercialización en la maduración. El contenido de jugo fue superior en los frutos acondicionados y almacenados a 0 ºC respecto a los controles, pero no existieron diferencias entre los tratamientos en las ciruelas almacenadas a 5 ºC. Harinosidad se visualizó en frutos acondicionados y controles a 0 o 5 ºC, sin diferencias entre los tratamientos. Los frutos controles, en la maduración, presentaron pardeamiento pasados 42 días a 0 ºC y retención de firmeza pasados 28, 35 y 42 días a 0 ºC. El acondicionado causó una tendencia de aumento del porcentaje de frutos sanos en la maduración pasados 28, 35 y 42 días a 0 ºC.
DELAYED COOLING EFFECT ON THE QUALITY OF ‘CONSTANZA’ PLUMS The effects of delayed cooling (DC) at 20 oC for 6 days before cold storage was studied in ‘Constanza’ plums evaluating development of quality and chilling injuries. At the end of the DC treatment the plums were cold stored at 0 oC for 7, 14, 21, 28, 35 or 42 days or at 5 oC for 7, 14 or 21 days and evaluated at harvest, after cold storage periods and after a ripening period at 20 oC. The control fruits were stored at 0 or 5 oC. Weight loss was low during storage at 0 or 5 oC and increased during ripening periods. Firmness changed little in control plums at 0 oC while in DC plums decreased constantly up to 28 days. Delayed cooling treatment resulted in significant decreases of firmness of plums stored at 5 oC, which presented 50% of fruit with unacceptable firmness for commercialization after the ripening periods starting from 7 days of storage. Extractable juice was higher in DC fruit than in control fruits at 0oC, but there were no differences in juiceness in plums stored at 5 oC. Woolliness was visualized at ripening in DC and control fruits stored at 0 or 5 oC without differences among treatments. At ripening, control fruit presented internal browning after 42 days at 0 oC and leatheriness after 28, 35 and 42 days at 0 oC. Delayed cooling induced an increase of the percentage of healthy fruit after 28, 35 and 42 days at 0 oC.
The effect of avocado cold storage on the occurrence of post-harvest physiological disorders was determined for different harvest dates, storage temperatures and storage periods. Twelve 8-year-old trees were used, with three samplings being performed every month as of January 18, 2006. Harvested avocado samples were stored for 10, 20 and 30 days at 4, 6 and 9oC and evaluated after a storage period at 20oC, once the fruit reached 0.5 0.9 k-f firmness. Evaluated parameters were fibre browning, internal browning intensity, percentage of flesh with internal browning, percentage of external spots and seriousness of grey spots. For the different parameters, avocado fruits were evaluated by means of a grading scale. The results were analyzed by ANOVA according to a factorial randomized design of 3 x 3 x 3 (harvest dates x storage periods x storage temperatures) and by the Kruskall-Wallis test when the data did not comply with the assumptions of normality and equality of variance. The results obtained indicate that for fibre browning differences were detected among treatments, attributed to harvest dates, storage periods and storage temperatures, with harvest dates as determining factors. Regarding the intensity of internal browning, percentage of pulp with internal browning, percentage of outer spots and seriousness of grey spots, no statistically significant differences among treatments were found.
