Many factors are known to influence trace element metabolism and one of them is dietary protein. The present study examines the effects of casein, soybean protein, and peanut protein on the metabolism of the Zn, Cu, Fe, and Mn in growing rats. The results showed that Zn, Fe, and Mn excretions in the feces of peanut protein-fed rats (PPERs) were similar to that of casein-fed rats (CPFRs) (p>0.05), whereas all of the Zn, Cu, Fe, and Mn excretions in the urine of PPFRs were significantly higher than that of CPFRs (p<0.05), but its apparent absorption rate (AAR) of Cu, Fe and its apparent retention rate (ARR) of Cu were all higher than that of CPFRs (p<0.05). Hepatic Zn content of soybean protein-fed rats (SPFRs) was higher than that of CPFRs and PPFRs (p<0.05 respectively) and serum, renal, and femoral Cu contents of SPFRs were significantly lower; however, hepatic Cu, and renal Mn contents were significantly higher than that of CPFRs (p<0.05, respectively); The hepatic Fe content of SPFRs was significantly higher than that of CPFRs and PPFRs (p<0.01, respectively). To sum up, compared to casein, soybean protein might be a good dietary source to make up for Zn and Fe deficiency, and also peanut protein to make up for Cu and Fe deficiency.

Objective: To observe nutritional physiological functions of hempseed protein.Methods: 50 growing SD rats were divided into five groups,10 of each.The control group was casein protein group(CG),others were soyben protein group (SG),peanut protein group (PG),hemp protein group (HG) and linseed protein group (LG).All rats were fed semi-synthetic diets prepared with different kind of proteins.All group diets were matched on energy,protein,carbohydrate,fat and cellulose.All rats were pair-fed 40 days to observe changes of their nutritional physiological indexes.Results: The body weight and food transformation rate (FTR) of all plant protein groups except SG had obvious difference compared with CG (P<0.05) and HG was the lightest in all groups.Excretion of feces and nitrogen content of HG was much higher than other groups.The brain index of HG and PG was higher than CG(P<0.05).The level of TG,CH of serum of all plant protein groups were notable lower than that of CG.At the same time,their TBA level was distinct increased than CG (P<0.05).SG,HG and PG rats had lower level of blood sugar compared with CG and LG.HG had the strongest antioxidation that it could improve SOD activity in both serum and liver and also depress the content of MDA.The lemptin level in liver of four kinds of plant protein groups was lower than CG (P<0.05).HG,LG and PG rats had lower level of platelet and leucocyte and effective regulation on intestinal flora.They can restrain growth of Clostridium Fringens and facilitate Lactobacillus and Bifidobacterium.Conclusion: Hemp protein has notable effects on regulation of glucose,lipids and platelet level of blood.It also can place beneficial roles in weight loss and excretion through ways of adjusting L-lemptin level and balance of bacteriums in intestines.So the conclusion can be made that hemp protein is an excellent plant protein resource for health.
To evaluate the anti-oxidative function of artichoke leaf extract(ALE) by anti-oxidation experiments in vitro.Four different antioxidant evaluation systems in vitro were assessed for anti-oxidation function of ALE with the results expressed as IC50.ALE in the four kinds of systems showed different antioxidant capacity.Among them,NH2OH-Xan-XOD system showed the lowest IC50 value of 16.5 μg/mL,while dityrosine/tyrosine system,showed the highest IC50 value of 310 μg/mL.ALE had anti-oxidant activity with dose-dependent effect.

Now the soybean is considered as functional food by FDA of USA. It is very clear that the Chinese traditional food therapy depends on the functionality of natural food, and the vegetable is an important part of natural food. So many health functions of different vegetables are also substantiated by modern scientific research. In 21 th century, modern nutrition also submitted the new term "Functional Food". It means that the dietary and nutritional factor has a very important role in the prevention of chronic non-infection diseases of the human being. So now we should combine the scientific knowledge from the Eastern traditional agricultural civilization and the Western modern industrial civilization. To dip, coordinate and develop the Chinese traditional food therapy and to take over prevention could be a great step forward for establishing a healthy society.
Objective:To observe the nutritional physiological functions of unfermented and fermented Pu'er tea.Methods:30 SD rats were divided into three groups,the control group,the unfermented Pu'er tea(UPT) group and the fermented Pu'er tea(FPT) group,10 of each.The control group rats were fed normal semisynthetic diets.The UPG and FPG group diets were added 6% unfermented and fermented Pu'er tea powder respectively into normal semi-synthetic diets.And the three kinds of diets were matched on energy,protein,fat and cellulose.All rats were pair-fed 30 days to observe changes of their nutritional physiological indexes.Results:The body weight,food transform rate(FTR),serum tirglyceride(TG) and free fatty acid(FFA) of UPT and FPT group were all obviously decreased than those of control group(P0.05).Body weight of FPT and UPT group rats were 9.6% and 7.3% lower than that of control group respectively.Serum TG level of UPT and FPT group were dropped down by 47.1% and 32.2% compared with control group.Serum HDL-C level of FPT group and LDL-C level of two Pu'er tea groups were obviously higher than those of control group(P0.05).At the same time,activity of serum GSH-PX of UPT group was 2.5% higher than that of control group.The serum MDA content of UPT and FPT groups were 27.0% and 20.8% lower than those of control group(P0.05).Conclusion:Pu'er tea had obviously effects on controling body weight and suppressing TG and FFA levels in serum and liver of rats.The actions of fermented Pu'er tea were better than unfermented pu'er tea.Further more,pu'er tea also had powerful antioxidation to depress the content of MDA and heighten activity of GSH-PX in serum.The unfermented Pu'er tea was prior than fermented Pu'er tea at this aspect.

The effects of the feed with mawseed oil and corn oil on nutritional physiological functions of growing rats were observed.The result showed that in spite of having similar nutritional physiological function,the mawseed oil could observably depresse the triglyceride(TG)level in serum.It had the functions of strong antilipid peroxidation and adjusting uric acid metabolism.So mawseed oil is a kind of healthy edible oil resource
Objective: To study the difference of nutritional components in chest and thigh meat between braise stove roast duck and "Shuxiangsu roast duck". Methods: 40 raw ducks were divided into 4 groups, each of ten:raw duck group(RD), raw duck soaked with vegetable juice(SRD), roast duck(ROD) and "Shuxiangsu roast duck" soaked with mixed more than 13 kinds of vegetable juice group (SROD). The contents of protein, raw dietary fibre, ash, minerals, trace elements and free amino acids, in degreased duck meat were determined. Results: The contents of fat and energy in SROD group were significantly lower than that in ROD, the energy decreased 7% and fat content decreased 12% in chest meat of SROD and with statistic significance. However, contents of carbohydrate, ash, potassium, calcium as well as iron, manganese, copper were significantly increased. Especially the potassium level increased 34% and 14% in chest meat and thigh meat of SROD respectively. Result from the measurement of free amino acids indicated the contents of arginine, which is related to fishy smell, decreased 43% in thigh meat of SROD. While the contents of glutamic acid and aspartic acid,which may improve fragrance and flavor were significantly increased. The glutamic acid content increased 15% and 24% in chest meat and thigh meat in SROD respectively. The contents of aspartic acid are equal to 1. 89 times and 1.78 times in chest meat and thigh meat of ROD respectively. Conclusion: Improvement of technics, i.e. soaking duck in mixed vegetable juice before roasting and filled the mixed vegetable juice in abdomen during roasting process, may not only improve taste and flavour of roast duck, but also enhance its nutritional value.
本文以玉米胚芽油和低温冷榨橄榄油为对照,观察低温冷榨亚麻籽油的营养生理功能。文中选用生长期SD大鼠30只,分为玉米胚芽油组、冷榨亚麻籽油组、冷榨橄榄油组3组,分别饲喂3种食用油制备的人工半合成饲料。各组饲料的能量、蛋白质、脂肪和纤维素的含量均保持一致。采用对喂法喂养8周,观察大鼠营养生理指标的变化。各组初体重一致。实验结束时,橄榄油组大鼠体重显著低于玉米胚芽油组(P<0.05),食物转化率各组间无显著差异(P>0.05)。亚麻籽油组血糖水、甘油三酯和总胆固醇水平均显著低于其它两组(P<0.05),血糖比玉米油组低15.9%,比橄榄油组和植物黄油组低19.4%;甘油三酯比玉米油组低26%,比橄榄油组低40.7%,总胆固醇比玉米油组低28.7%,高密度脂蛋白胆固醇(HDL-C)水平玉米油组显著高于其它各组(P<0.05)。血清MDA含量,橄榄油组和亚麻籽油组均显著低于玉米油组;而玉米油组肝脏SOD活性最高(P<0.05)。GSH-Px活性组间无显著差异。由此可得,亚麻籽油具有较强的降血糖和调节血脂作用,优于橄榄油和玉米油;亚麻籽油和橄榄油都能够降低血清脂质过氧化物丙二醛含量,具有较强的抗氧化能力。

To study the nutritional and physiological functions of peanut protein products produced by different processes.Methods:Growing SD rats were pair fed for four weeks with semi-synthetic diets with peanut proteins produced by different processes(high-temperature(HG) ,Low-temperature cooked(MG) and low-temperature raw(LG) ) respectively,and compared with casein diet(control group,CG) .The growing and metabolic statuses were observed.Results:The CG rats grew more rapidly than other groups and its rate of food transform was the highest.Espceially,the HG rats were both the lowest in them.All groups were in positive nitrogen balance and the value of MG group was the best.The feces and its moisture degree of all peanut protein groups were remarkably higher than control.Compared with other group's diets,the HG diet was the worst in all estimate indexes such as the rate of digestion,use,efficacy and grade of amino acid and the content of total protein,albumin and transferring in serum.The MG and LG diets were almost no notable difference with CG diets in these indexes.Conclusion:The traditional high-temperature producing process reduced the nutritional value of peanut protein and made it couldn't provide enough alimentation for growing rats.So it is disadvantaged to exploit and utilize the protein resource of peanut.Whereas,the peanut proteins produced by low-temperature processes were high quality plant protein that could fulfill the physical requirements.

The effect of peanut albumen powder with different defatting technics on regulating serum lipid of growing rats is observed.The rats in four groups were pair-fed semi-synthetic diets with different protein supplement in plastic metabolic cages.The feed is prepared by three different technics: containing casein as protein,raw peanut protein defatted in low temperature(LG),cooked peanut protein defatted in low temperature(MG) and cooked peanut protein defatted in high temperature(HG).Three kinds of peanut proteins can increase the level of HDL-C and the value of AAI and ratio of HDL-C to LDL-C,and decrease the level of LDL-C,while the LG group had the best effects on serum lipid,which is not only high quality nutritional plant protein but also more beneficial to regulating blood lipid of growing rats.
